This gin is a revved-up, spicy spirit with a full taste that lives up to its fiery visage. The navy-strength alcohol kick amplifies the heady, juniper-led aroma. This chimes in with the pepper-chilli flavour highlights that overly traditional bass notes of juniper, coriander and citrus. A lingering, spicy aftertaste rounds off a flavour ensemble that adds a kick to mixed drinks.

Legend has is that over a hundred years ago, in a tropical Australian manor, the Lamington was accidentally created when a maid dropped her governor's favourite sponge cake in a vat of melted chocolate. Our lamington liqueur combines notes of chocolate, vanilla and coconut, blended in our sugarcane spirit and for today's modern rebellious spirits - boosted with a dollop of sweet strawberry jam. Paying homage to the historical sailors, this Gin meets the test they required for “proof” that the spirit delivered was as promised by the British Royal Navy. Using the base of our Signature Gin the intensified strength provides an enhanced flavour experience where each botanical dances on the palate. A punchy hit of fragrant aromas from the citrus, and the subtle sweetness of premium vanilla. On the palate, the strong peppery pine taste of juniper combines with the citrus flavours and finishes with a super warmth from our spice combination. A Gin full of flavour that won’t disappoint.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

After maturing for years in South Australian red wine casks, our Muscat Finish Whisky spends additional time in richly flavoured South Australian fortified wine casks. These European oak casks held muscat for at least 20 years, and impart bold flavours of dried fruit and fine tannin.

Growing up as market gardeners, there was always a passion for the best quality produce. This same passion has now developed into a fine single malt whisky. Hand crafted, barrel aged and matured.
