The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Growing up in the Hunter Valley, he was encouraged to be adventurous, curious and hard working. It was playing rugby in many of the world’s winemaking regions, travelling and working through New Zealand, France, Spain, Portugal, US, Italy, Coonawarra, McLaren Vale and Margaret River that sparked a further love of wine. This aromatic white blend is a fusion of 92% Sauvignon Blanc grapes with 8% Semillon grapes. These fruit parcels were harvested in the cool of the night and then cold pressed. The juice obtained was fermented in stainless steel before bottling. The resulting blend displays a pale green colour. The lifted bouquet exudes fresh aromas of guava, with hints of Semillon grapes evident in the background. The medium-bodied palate initially presents flint dry and racy fruit flavours, balanced by crisp acidity. The finale is excellent and lingering. Made for consumption upon release, this enticing white wine has the potential to be cellared for 2 to 3 years from vintage. Swings & Roundabouts Sauvignon Blanc Semillon goes well with poached salmon, Rottnest King George whiting or goat cheese.

Forester Estate Sauvignon Blanc has clean aromas with underlying richness and varietal fruit characters of lychee and passionfruit. There's a subtle hint of blackcurrant along with lime and well integrated cedar oak. There is a herbaceous thread through the wine of pea shell and nettle along with underlying wood smoke. On the palate, full and textured with a rich creamy texture. There is lychee, lemon thyme, nettle, roasted red capsicum and passionfruit along with balanced cedar oak and wood smoke.

Cape Mentelle Sauvignon Blanc Semillon is delicate yet full, the palate is distinctively lemon and lime with subtle star anise, lemongrass and clove. Richness and weight are balanced with fresh acidity, giving direction and finesse.
