The Chardonnay goes through half a ferment before bottling takes place, and that’s where the fun begins! Once in bottle, the rest of the ferment takes place. The trapped CO2 creates bubbles upon bubbles, and there you have it! A joyous bottle of refreshing fizz.

We created The Hidden Sea to captivate our friends while allowing them to feel a part of something bigger than themselves, celebrate the amazing place we make our wine and look and taste damn great. By Drinking this bottle of The Hidden Sea we will remove the equivalent of 10 500mL plastic bottles from our Ocean and recycle them. Colour - Pale straw with green hues. Aroma - Lifted and lively with grapefruit, gooseberry, and fresh lychee. Palate - Crisp and refreshing with tropical fruits, lime zest and white pear.

Fruit is machine-picked at night to ensure cooler temperatures and retain fruit aromatics. On arrival at the winery, the fruit is gently pressed to minimise phenolics and maximise fruit flavour and delicacy. All base wines undergo 100 percent malolactic fermentation and remain on lees until required for blending and stabilising. The final base wine components are then bottle fermented and spend a short period on tirage lees, providing further yeast complexity in the final wine.
