Great Southern Distillery Limeburners American Oak Single Malt Whisky
When first released in early 2016 this expression became an instant classic and sold out in record time. This Limeburners American Oak Single Malt Whisky was matured in refill American oak bourbon barrels. It has no added colouring and is non-chill filtered and is a lighter, very smooth style of single malt whisky, which really allows the malted barley flavours and ex-bourbon cask influence to shine through. Exhibiting gentle citrus and honey aromas, American Oak has a bright, golden colour with a bold and full flavour. Upfront spice with vanilla notes and a medium to long finish.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

When Cameron Syme set up Great Southern Distilling Company in 2004, he had one goal – to make the best spirits in the world. Today, Cameron has established and owns 3 distilleries, two under the Great Southern Distilling Co, banner and one distillery operates under Margaret River Distilling Co. Great Southern Distillery Limeburners Sherry Cask Cask Strength Single Malt Whisky has been matured in ex-bourbon American oak barrels and finished in an old Australian Sherry cask. From here it is transfer straight from barrel to bottle, creating a full and intense flavour. When served neat, this whisky has fruit and spice aromas, but add a splash of water and you get malted barley, honey and vanilla mixed with buttery caramel and raisins. Each unique barrel will exhibit its own unique characteristics, creating slight variation from batch to batch.

The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before entering the casks for ageing.
