From a thoughtful selection of our Bothwell Distillery’s bourbon, sherry and white oak casks to a balance of both Seppeltsfield PX Sherry and Lark brandy barrels comes a mosaic of a single malt both quaint and comforting. Full of dark forest fruits, bright citrus peel and Tasmanian brandy blanketed in toasted oak, this indulgent little dram is as a slice of fruitcake and a cuppa. A sticky, plummy, homemade fruit cake in a glass, Orange peel-infused caramel pudding topped with spices. Dried fruits play off the rich, earthy oak.

Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Handcrafted from 100% West Australian grains, Upshot whiskey is modern Aussie expression of a well rounded bourbon. Uniquely smooth and inviting, artfully aged in virgin southern white oak in our urban Mediterranean climate. Fragrant with a delicious melange of vanilla, dark toffee and hints of nutmeg flavour, infused in a creamy texture, prefect for enjoying across seasons and in good company.

Symphony Nº1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky that’s full of life from start to finish and carries the uncompromised signature of Lark Whisky - a Tasmanian icon. Aroma of fresh mango, toasted pineapple, orange, vanilla and tangerines. Luscious and fruity. The palate shows peaches, apricot, even more mango, and sweet Tasmanian apples dipped in toffee. Lark Tasmanian Single Malt Whisky is proudly unique in character and style. Entirely made by hand, Lark consistently distills some of the worlds most prized Whiskies, with no more than 100 litres at a time. Distilled in locally crafted copper-pot stills, this exceptional classic cask is the flagship product of the Lark Distillery. This Whisky is best described as a complex mix of vanilla-caramel-maple syrup with some slightly spicy, floral notes and gentle hints of fresh pepper on a flavourful lingering finish. New Golden Bickie flavoured Aussie Whisky from Ned. As sweet and tasty as an iconic golden bickie straight out of the oven, this whisky has an instantly recognisable sweet and buttery smooth texture. Aroma: A very familiar vanilla and warm golden syrup with fresh oats and pastry jump out of the glass. The sweetness grounded in the nostalgia of golden bickies straight out of the oven. Flavour: Golden syrup covers everything on the creamy, sweet palate. Toffee, vanilla essence, coconut with just a hint of white chocolate. A full and silky texture. Finish: Dried oats dipping in caramel and golden syrup sweetness, the biscuity notes round out a highly satisfying and moreish experience.

Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. Mouthwatering mandarin, maple, meadow honey, macadamia, and marizipan. Bright and juicy notes of black cherry, orange blossom, and toasted oak, topped with vanilla bean whipped cream, just delicious.
