Iron House Distillery Port Single Malt Whisky
Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. Morris Sherry Barrel Single Malt Australian Whisky
Morris Sherry Barrel is a mature style single malt whisky that highlights the perfect balance of oak, malt, and sherry barrel influence. Maturated in a combination of French and American oak ex-Australian red wine casks and finished in barrels that have held our Morris of Rutherglen 10yr-Aged Amber Apera (Sherry). The Aged Amber is a full flor fino, produced predominantly from the Palomino grape. It exhibits a drier style, showing elegance and complexity from years of long-term aging in cask, making it a beautiful compliment to the whisky. The result is a well-integrated and very approachable Australian single malt which the broad whisky consumer can embrace. Bottled at 46% ABV. Colour: Tiger-eye gemstone with copper highlights. Nose: Spun toffee, baked fruit flan with peach compote and fresh sherry cask notes. Product Information: The American Oak ex-Bourbon single casks are some of their most awarded and esteemed expressions. Aged in American Oak ex-Bourbon casks, this oak varietal beautifully enhances Sullivan Cove's distinctive and fruity spirit. With a robust malt base, it unfolds layers of vanilla, caramel, coconut, fruit, and delicate hints of white floral and herbal notes. As single cask bottlings, every batch presents distinct nuances, reflecting the character of each barrel. Cask number 'TD0342' was distilled in December of 2008 and decanted in November of 2023, maturing at 14 years, 8 months, in single 200-litre, first-fill American oak bourbon cask. Yielding just 215 bottles in total, this whisky is bottled at a strength of 47.1%. Starting off with fresh green apples and a whole lot of American oak. Initially, the oak profile is on the tight side, but with air it loosens and begins to express its buttery sweet self – cashew nuts in honey, sponge cake and vanilla cream. At the same time as the oak profile is unfolding, so is the bounty of Sullivans Cove spirit character – incredibly fruity and citrusy with mango, guava, kiwi and cantaloupe. A delicious and brilliant complimentary array of flavours. Palate - Lemon Curd, Chamomile, Cocoa Powder Wow, incredible texture and presence. Thick and waxy spirit simply bursting with candied ginger, deep chamomile, daisies and Dutch cocoa powder. The structure and body are both full and broad, initially oak-driven, but now coming into perfect balance as the spirit expresses sweet citrus and salted cantaloupe, filling out the mid-section. Wafers and sponge cake come next (with berry jam this time!), and the palate continues to unfold with orange sherbet, Turkish delight, more Dutch cocoa powder and a beautiful bright herbal and floral layer. Finish - Chocolatey, Warm Citrus, Savoury Notes Leading the finish is the rich, chocolaty side of American oak, swiftly accompanied by the delightful warmth of citrus and fruity notes, particularly guava, reminiscent of the nose. As the finish unfolds, the herbal and bright elements intensify, and impressions of watermelon candies, daisy stems, subtle savoury hints akin to a hot chocolate stout, all rest upon a broad structure supported by beautifully firm tannins.
