The Gospel Gospel Solera Australian Rye
Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Hellyers Road 10 Year Old Original Single Malt Whisky
Hellyers Road Distillery, situated on the picturesque northern Tasmanian coast line, was established in 1997 and is Australia's largest distiller of Australian single malt whisky. Named after Henry Hellyer who was one of the first explorers to set foot in the interior north of the then Van Dieman's Land. This 10 Year Old single malt whisky is Hellyers flagship product and is distilled from Tasmanian grown malted barley, pure rainwater and yeast. American White Oak barrels are used to mature this bespoke malt that delivers a smooth and balanced taste.

Iron House Distillery Port Single Malt Whisky
Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.
Hillwood Distillery Port Strength Single Malt Australian Whisky
Single malt. Single cask. Small batch. Hillwood is a contemporary Australian whisky. Made in the tradition of Scottish single malt, but given a distinctive edge from the wild Tasmanian landscape and their artisanal family approach. A Single Cask, Tasmanian Single Malt Whisky, Non-chill filtered, directly from the Cask. Port Cask aged in French oak wood. Approximately 30-34 bottles produced per batch and bottle at cask strength. Aromas of toasty butterscotch toffee and malt with notes of roasted almonds, Rich fruit cake and plum pudding. A thick, oily, oaky palate with dried fruits and dark chocolate. The dram builds across the palate to a big, full and zesty peak. The finish is long, warm, and comforting with clean dry and lingering spiciness. Takes a little water very well with more viscosity and marzipan notes developing as it rests in the glass.
Sullivans Cove Old & Rare American Oak Second Fill Single Single Malt Whisky (TD0079)
Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.” Well said. And the way the oak develops during the finish, just when you don’t want to let go, keeping the show going; it brings another season to binge on, and we love it.
