Established in 1887, Glenfiddich, Gaelic for Valley of the Deer, is one of the few single malt distilleries to remain entirely family owned. After 12 years of maturation in oloroso sherry and bourbon oak casks, this signature single malt, is the true pioneer of the prestigious single malt category. Based on a strong belief people should drink better, not more, Four Pillars is leading the charge to elevate the craft of distilling and celebrate the craft of cocktail making in Australia. Their Rare Dry Gin is made in a truly modern Australian style, capturing the flavours of both Asia and the Mediterranean with a mix of local and exotic botanicals (even using fresh oranges as one of its botanicals rather than dried orange peel). Each bottle is individually numbered, hand labelled and produced in small batches from their small distillery in the Yarra Valley.

Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish. One of the six classic malts of Scotland, this Whisky is best enjoyed neat or with a slight dash of water.

Johnnie Walker Aged 18 Years has rich sweet fruit aromas along with toffee caramel, vanilla and a hint of smoke. Its warming and sweet on the palate with dark fruits, malty cereal, smooth creamy vanilla, fragrant almonds and tangerines, and a gentle smoke developing. A lingering finish brings notes of dark chocolate, caramelised citrus peel and very light smoke.

Yarra Valley makes some of the finest wines in the world. In 2015, Four Pillars combined Rare Dry Gin with some of the best Shiraz Grapes in Australia to create Bloody Shiraz Gin for the first time. 2018 release has great depth of colour compared to previous releases. Flavour-wise it's showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.

Islay artisans, Bruichladdich, turn their hands to producing the first and only Islay Dry Gin. The botanicals used comprise of nine classic gin varietals, plus 22 wild, Islay botanicals that are hand-picked from the wind-swept hills, peat bogs and the Atlantic shores. The result is a highly distinctive, complex, floral gin with outstanding finish and impeccable provenance. In an age of re-badged industrial gins, the Botanist stands out as a truly artisanal, small-batch, hand-crafted labour of love and distiller's art. A breath of botanical Islay in every glass.

One by one, The Last Great Malts of Scotland will leave their distillery gates. Deemed the bad boy of Speyside, Craigellachie is an unapologetically unique and challenging Single Malt. This is a complex dram, packed with flavour and texture. 13 Years Old, from an 1891 distillery. Bottled at a punchy 46% ABV. A stubborn, sulphurous single malt, condensed in rusted worm tubs on an inhospitable rocky bluff.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon.
