Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

Johnnie Walker Green Label Scotch is a blend of entirely Single Malts and has aromas of smoky vanilla oak, pepper, fresh cut grass and sandalwood on the nose. The once mothballed Bruichladdich Distillery on Islay is better known for its idiosyncratic and eclectic range of single malts. Now they’re making a gin that’s the talk of the town. Mark Reynier, one of the key instigators in this distillery’s recent revival, explains, “Botanist gin came about because we are curious about distilling. For us it is not a question of merely pushing buttons, we like to test our distilling skills, we are intrigued. With Trestaraig and X4 we have explored triple and quadruple distillation, so with a Lomond still that we had liberated from Inverleven in 2003, we were wondering how to use it. It was an experimental still, the first of its kind and now the last”. The resulting gin uses nine of the classic gin aromatics – orris root, cassia bark, coriander seed, etc – and augments these with a heady harvest of 22 wild, native island botanicals, hand-picked by Bruichladdich’s expert foraging team from the windswept hills, peat bogs and atlantic shores of this Hebridean island of Islay. These include wild Islay Juniper, Elderflower, Bog Myrtle, Tansy, Hawthorn Flower, Birch Leaves, White Clover, Sweet Cicely and Lady's Bedstraw, amongst others. This truly seasonal and exotic cocktail is then slow "simmer" distilled in the lomond pot-still, nicknamed "ugly betty". Head distiller, Jim McEwan explains, “Betty prefers to work at low-pressure and won’t be rushed. So our precious botanicals are slowly and gently coaxed into releasing their complex, signature aromatics. Jim says he had to "learn a new dance" with Betty, and none of us knew what to expect from that first, achingly-slow 17 hour distillation. The result: a highly distinctive, complex, floral gin with outstanding finish and impeccable provenance. In an age of re-badged industrial gins, the Botanist stands out as a truly artisanal, small-batch, hand-crafted labour of love and distiller's art. A breath of botanical Islay in every glass. Orange peel on the finish leads into a subtle, persistent peppermint / eucalypt aftertaste. Great stuff - and if you're mixing, it lends a lovely creaminess to G&T’s. 46% Alc./Vol.

Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright.
