Rob Dolan is a well-known Yarra Valley wine maker Much like the wines he makes he is friendly, approachable and instantly likeable. Rob has been making wines in the Yarra Valley for over 20 years and has played a pivotal role in the Valley's evolution. The True Colours Dry Rose is a pale-rose/copper with a pink hue. Aroma's of Rose petals, red berries followed by a dry, savoury, textural and refreshing finish.

Tasting Notes: Pineapple, nectarine and lime aromatics along with lengthy butterscotch and biscotti flavours. A well-structured wine to be enjoyed from now to 2020.

Hand plunged in open fermenters, 30% whole bunch. 10 months maturation in 20% new French barriques, 80% seasoned French barriques. Bottled unfined and unfiltered.Ripe red cherries, some nutmeg spice. Aromatics lifted by subtle whole bunch fermentation plushness. Rich, structured palate.

This very special drop is the perfect way to add a little sparkle to every occasion. Delicate pale yellow with an edge of green in colour, this sparkling wine is made from a blend of Chardonnay and Pinot Noir. The bouquet is bright and driven by lemon, pear skin and an exotic subtle marzipan perfume mixed with suggestions of baked French pastry. The palate is lively and also exhibits fresh lemon, Granny Smith apples complemented by an interwoven chalky minerality. This wine has spent 3 years in bottle providing yeast autolysis influences on the palate and provides further complexity to this traditionally made sparkling wine from Zonzo Estate.

This is a typical cool climate Yarra Valley Pinot Noir with aromas of cherries and summer berries and hints of spice and oak. The palate is bright with red fruits and soft tannin. This is a versatile wine that will match well with many foods; try it with a charcuterie platter, pizza/pasta and porcini mushrooms or barbecued meats.

This is our first bottling from the bizarre 2020 vintage, which went from ridiculous to sublime. We had very small crops, early tannin ripeness and picked at low baumé. We avoided disease pressure in a very difficult year for that, and ended up with more transparency and freshness in the fruit than 2019. This year we were back to a 50:50 mix of skins and whole-bunch ferments. The skins ferment was 72 hours, with light hand-plunging every 12 hours during that time. The wine was pressed at 8 baumé to old puncheons. The whole-bunch ferment was on skins for 14 days, with carbonic maceration until some light pigeage on days 12 and 13. It was pressed to old puncheons to finish ferment. Both batches had two months in oak unsulphured. The wine was racked in early May, with minimal filtration and no finings. 40ppm of SO2 was added prior to bottling. This vintage we focused on prettiness with supporting notes of funk and bunch. There was no shortage of flavour about; itâs an intense year for that but also characterised by high natural acidity â perfect for skinsy styles, which can otherwise become a bit soapy. Once again this producer provides us with a handy little number showing plenty of varietal and regional characteristics. Sticks Pinot Noir from Yarra Valley, features lovely red cherry flavours with playfull spices and charry oak influence. Lean with subtle tannins and medium finish.
