Southern Vales McLaren Vale No. 7 Cabernet Shiraz

In 1802, the peaceful Encounter of two great explorers, the English Captain Flinders, and the French Captain Baudin, occurred at the co-ordinates of 35 ̊40’S and 138 ̊58’E, off the south coast of South Australia. Following this discovery, a period of settlement and agricultural establishment ensued, and a large winery was built in our region in 1896, which latter became known as Southern Vales Winery. Each one of our wines has a story and integrity of its own. Today, Southern Vales is a place where valley and sea meet, our family’s work hard together, and we all share the bounties of regions natural way of life. Seven is the seed of life, it is the number of perfection, security, safety and rest, it also contains the number three of the heavens and soul with the number four of the earth and body. The No. 7 is a classic Australian blend of Cabernet Sauvignon (54%) and Shiraz (46%), the aromatic and perfumed Cabernet Sauvignon providing the firm structure and distinctive tannin length while the spicy Shiraz contribute the richness and softness. The fruit is complimented and enhanced by extended maturation (24 months) in French oak barrels, which softens and complexes the rich fruits resulting in a full-flavoured and generous wine with great length and harmony. Variety - 54% Cabernet Sauvignon, 46% Shiraz Region - McLaren Vale Colour - Purple Black Aroma - The rich bouquet shows blue and blackberries, dark cherry, cassis and a touch of anise intermingled with dark chocolate and vanilla oak. Palate - Sweet ripe fruit flavours provide plushness on the palate and are nicely balanced by soft ripe tannins which extend the flavours in the mouth. Rich and full-flavoured now, this wine will benefit from more time in the bottle.

Ulithorne Prospera McLaren Vale Shiraz

The Prospera displays a dark ruby-red colour tinted with a crimson rim. On the nose, the aromas are brimming with plentiful ripe fruits of cherry and strawberry, followed by fine spices and florals. The palate presents a fruit-driven wine with characters of fresh cherry and juicy plum, ascended by hints of cinnamon and liquorice.

Vineyard This Estate owned single vineyard really is the epitome of what defines one of the greatest vineyards in Australia, where the famous Black Bay of Biscay Clay soil ensures fantastic depth of colour and concentration. Positioned at about 120m above sea level and 8kms inland this North/ South facing vineyard is in the heart of McLaren Vale. We pride ourselves in sustainable viticulture practices and having true respect for the value of our vineyards and the fruit they create. Monitoring and measuring the vines is a crucial part of maintaining fruit quality of this level with a key focus being on the soil health and how this impacts the vine, the fruit and in turn the wine and the experience. The fruit for this wine is picked a little earlier to ensure a slightly lower alcohol level. Winery In the winery The Descendant of Squid Ink Shiraz fruit is treated with utmost respect, ensuring quality from start to finish. With a 2 day cold soak prior to a slow cool fermentation for gentle extraction colour, flavour and tannin extraction are closely monitored with different fermentation cap management applied accordingly. Following fermentation, the wine is then matured in a special selection of the finest 4 year old seasoned American oak Hogshead (300L) oak barrels for 9 months. Maturation 9 Months in well-seasoned 4 year old American Oak, Hogshead (300L) oak barrels. Colour Deep red with vibrant purple hues. Nose Deep dark fruits with some black olive, earthy complexity entice the senses followed by complementing dusty oak characters. Palate Fresh vibrant fruit coats the mouth, complimenting the gentle, soft furry tannins and spice that line the mouth and leave a lasting impression. Cellaring Drink now or cellar for 7+ years.

Yangarra Shiraz

Yangarra Estate is a biodynamic wine farm in the McLaren Vale devoted solely to producing wines from the best grape varieties of the southern Rhone. Shiraz from the Yangarra estate vineyard adopts more of a cooler climate expression than the typical McLaren Vale style, thanks to the vineyards elevation and cooling night breezes from the nearby Southern Lofty Ranges, but retains concentration and complexity. lots of lifted violet aromas, with fresh cherries and plums, with a soft and juicy palate and fine elegant tannins.

Mr Riggs Shiraz

Made by Rockstar winemaker Ben Riggs, the McLaren Vale Shiraz is as true an expression as one could hope for. The fifth release of the wine is based around a core of pristine fruit with dark red berries, hints of spice, earth, tar and leather and with seamlessly integrated oak. Ripe tannins are apparent but not overwhelming, meaning this is a wine which can be enjoyed now or in the next 10-15 years.
