Each variety was kept separately with the idea to maximise it s potential prior to blending. They've always loved the raw possibilities and natural outcomes of minimal intervention winemaking, and have worked over the years to source fruit with lower impact and gentler farming - which they believe is the future for wine. Mon Tout Heydays Chardonnay 2022 vintage comes with another change up this year with Mount Barker dictating even more of the style than the 2020 release, yet Heydays is still overtly, beautifully and enticingly Chardonnay. Delicate floral aromas of honeysuckle, apricot, and lemon zest. Flavours of stone fruit, lychee and pear combine in a silky and seamless manner. The fine, mineral acidity and oak tension adds restraint, texture and length.

Fragrant and energetic, the nose has an abundance of lycee, kiwifruit and blackcurrant with lime curd and lemon sherbet. Thai basil, sliced fennel, ginger and citrus blossom sit neatly in the background. A gentle entry leads to a delicately textured mid palate. Bursting lemon, lime and grapefruit dominate throughout with bright acidity, a slightly savoury line and a talc-like finish.

Deep Woods Hillside Chardonnay exhibits lifted nectarine and white blossom characters. A suggestion of cedar like oak frames the generous stone fruit characters and complex chipped shell minerality. The palate is clean and lively with tremendous depth of ripe stone-fruit flavour nuanced by cashew notes. Bright citrusy acidity ensures and long and seamless finish providing enhanced structure and length.
