Once & Wells Chardonnay comes from grapes grown in both the warmer and cooler areas of the Margaret River region, mixing tropical and citrus characteristics to produce a distinctive and well-balanced wine. The Chardonnays nose is vibrant, rich and enticing with tropical fruits such as lychee and pineapple, citrus, some spice, nougat and hints of jasmine. The palate is light and refreshing with a mealy mid-palate and elegant finish. A touch of vanilla and spicy oak gives this Chardonnay a refined note.

2020 A mild 2020 spring with reasonable rainfall provided excellent growing conditions. A wet November followed by a warm and dry December and January set the vines for up for a regular season.However wet and humid conditions in February created an unusual vintage with extreme weather. As a result, the 2021 vintage required extra work and attention to detail in the vineyard. The final wines show incredible flavour at lower Baume’s with bright natural acidity. Great fruit purity and varietal expression.

Direct input from Forester’s viticulturist ensureswell balanced canopies and crops are grown for the ripe style desired. The 2022 vintage was a mild year for white grapes in Margaret River,allowing plenty of time during February and March to ripen the fruit to ourspecification. Winemaking -Modern white wine making techniques are employed in the productionof the Lifestyle Chardonnay, with temperature control considered criticalfrom the moment the fruit reaches the winery. The fruit is de stemmed and crushed, then must chilled and pressed off skins in a very short space of time.The lightly clarified juice is then racked to barrels and stainless steel tanks forfermentation with a mix of wild and added yeast. Both tanks and barrels are stirred on yeast lees during their maturation period. Storage & Bottling -Bottled under screwcap into a burgundy bottle.

This exquisite Five Tales Sauvignon Blanc Semillon displays a pale straw colour with a bright green haze. The fragrant bouquet exudes lively aromas of tropical fruits, citrus and herbs, making way for a zesty and textured palate filled with intense citrus and tropical fruit flavours. These vibrant characters are balanced by crisp acidity, which leads this delightful white blend to a dry and refreshing finish. It has the potential to be cellared for 1 to 2 years from vintage. Suggested food pairings for this SSB include poached salmon, pan fried scallops and prawn ravioli.

Fragrant and energetic, the nose has an abundance of lycee, kiwifruit and blackcurrant with lime curd and lemon sherbet. Thai basil, sliced fennel, ginger and citrus blossom sit neatly in the background. A gentle entry leads to a delicately textured mid palate. They had a strong belief in the unique and expressive terroir of the Margaret River region, and it was this belief that carried them on their journey to create Stella Bella Wines. Back in 1996, Stuart and Janice took over the 'Suckfizzle' Vineyard, believing that its distinctive location would produce unique wines. They weren't wrong, and in 1998 the first vintage of Suckfizzle Sauvignon Blanc Semillon was released. The Stella Bella name was launched in the following yers, as their portfolio of wines grew. They added an estate range, an entry-level range under the label Skuttlebutt, and a premium range labelled, Serie Luminosa. In 2013, Stuart handed over the reins as Chief Winemaker to Luke Joliffe. Today, the Stella Bella team work with a variety of vineyards dotted throughout the Margaret River - Darch, Isca, Forest Grove, Karridale and, of course, Suckfizzle. Each site encapsulates a different aspect and terroir of the Margaret River, allowing Luke and his team to create harmonious blends across different vineyards, or to isolate single vineyard expressions and showcase the individual vineyard characteristics.
