The classic Margaret River blend. Pale green in colour, with aromas of succulent Sauvignon Blanc and grassy Semillon. The palate is flint-dry with an initial impact of sweet racy fruit and a fine and lengthy finish.

Abundantly ripe bouquet of stone fruits, white peach and nectarines mingled with fine buttery oak undertones. Creamy powerful, complex, mouth filling with a persistant dry finish.

Winemaking:Mostle machine harvested at night with some early morning handpicked fruit. Pressed into stainless steel tanks to settle, then racked to barrel while still hazy for wild ferment, allowing natural expression. Aged in a mix of old and new French barrels, with some lees stirring to build up texture and creaminess. Barrels carefully selected and blended to create the desired Chardonnay.

The Chardonnay is from low-yielding Gin Gin vines that are now over 20 years old. Painstakingly converted them to cane pruning (from the established spur pruning). The parcels were hand-harvested, foot stomped and naturally fermented in a mix of concrete egg (20%) and old barrels (80%). It only received a rough filtering to, keep the wine as close to the vineyard as possible. Fresh, crisp, organic Chardonnay.
