Winemaking: The fruit here comes from the Boyup Brook Vineyard. Small, concentrated berries are the source of the depth, structure and complexity of this wine. Fermented in open-tops and plunged twice daily until optimalextraction and maceration was achieved. Pressed off the skins and allowed to finish ferment in stainless tanks, before being racked to barrel and aged for around 8 months in older oak. Precise blending of the two varieties took place to achieve the desiredcharacter of this wine.

Each wine embodies the grape variety and region in which it was grown.

Grape variety - 89% Cabernet Sauvignon, 8% Cabernet Franc, 3% Petit Verdot. Oak maturation - 100% of the wine is aged in French oak barriques (20% new) for 15 months. Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.

Aroma -A complex and fragrant rosé that opens with savoury notes, strawberry, dried flowers, musk, brioche, flint and spice. Palate -Full with a rich creamy mouthfeel and firm acidity. Viticulture -Fruit to make the Jack out the Box Rosé was sourced from a premium vineyard in Margaret River. Close monitoring and analysis of these vines leads to shoot or bunch thinning by hand if required to obtain the perfect balance for good exposure and healthy ripening. A philosophy of minimal inputs in this premium block allowed the unique combination of variety, soil type and microclimate to shine through and produce a parcel of fruit with true character. The 2023 vintage was a mild year in Margaret River allowing enough time to ripen fruit to our specification. Winemaking -The Malbec grapes were harvested early in the morning, then sent directly to the winery for processing where the free run juice was separated from the skins immediately to limit colour and phenolic extraction. The clarified juice was transferred to old French oak barrels for fermentation in a cool room. All barrels were stirred fortnightly until blending and bottling. Storage & Bottling -The 2023 Jack out the Box Rose was bottled in August 2023 to flint premium claret glass with a stelvin closure.

Made in the contemporary style, Marchand & Burch Rosé flaunts a luminescent sunstone colour with light pink tinges. The wine's bouquet exudes aromas of strawberry coulis and cream. The silky palate shows flavours of red berries and peach. The saline, chalky and savoury notes provide length as well as a fine drying balance to the wine's finish. All in all, it's a gentle wine, perfectly layered with subtle complexities to be explored. This Rose pairs very well with light pastas, seafood and goat cheese.
