Credaro Five Tales Cabernet Merlot

This red wine is a delicious blend of Cabernet Sauvignon and Merlot grapes, procured from picturesque vineyards in the renowned Margaret River wine region. Poured into a glass, it shows a medium deep red colour accompanied by purple hues. The fragrant nose offers lifted aromas of dark berries and spice coupled with dried herb and chocolate hints. Robert Oatley Signature Series Cabernet Sauvignon

This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. Pair it with dishes like braised beef short ribs, garlic chicken wings, and zucchini gratin with tomato confit, to fully appreciate its satisfying flavours.

St Johns Brook

TASTING:Stunning vibrant fruit aromatics blackberry, cassis, and forest fruits. There's a hint of earthiness and spice adding complexity and a savoury element. The tannins are fine and long and drive the palate. Hint of red berries and pomegranate linger on the palate. The oak is intergrated and classy. WINEMAKING:Machine harvested fruit, crushed and destemmed. A portion of the fruit fermented in open-top fermenters, and the main portion in a larger format red fermenter. Macerated on skins for 10 days before being pressed into temperature controlled tanks to finish fermentation. Aged in 15% new oak, mostle French and some Hungarian for 18 months.

Maturation in seasoned French oak gives a subtle background of vanilla and spice. Palate: Medium bodied and vibrant palate sums up this wonderful expression of Wilyabrup Cabernet. The palate is fresh and full of vibrant mulberry, cassis and black cherry flavours. Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Winemaking The fruit was picked on the 2nd and 24th of April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static and open fermenter for period of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 10 months before bottling.

Howard Park 'Terroir' Cabernet Sauvignon

Cabernet Sauvignon grapes are sourced from several select vineyard sites located in the Wilyabrup sub region and north to Wildwood Rd in an endeavour to capture ripe fruit flavours, supple tannins and the distinctive perfume of Margaret River Cabernet Sauvignon. A deep and inviting black cherry colour with floral notes of violets and fruity, doughy aromas of just baked blackberry muffins. The palate is soft, inviting, and full of free range forest fruits, vanilla, cocoa and loads of supple, fine tannin. Such a pleasure to drink now but with ample ripe tannin structure to allow for aging up to 5 years.

Flying Fish Cove Wildberry Estate Cabernet

Palate:Medium bodied and vibrant palate sums up this wonderful expression of Wilyabrup Cabernet. The palate is fresh and full of vibrant mulberry, cassis and black cherry flavours. Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Viticulture This Cabernet Sauvignon was grown in the Wilyabrup sub region of Margaret River. The canopy management is a vertical shoot position trellis with a north south facing aspect. The clonal selection is the popular Houghton selection Cabernet Sauvignon. Soil types are typically sandy loam over free draining lateritic sub soils. 2021 is typified by a cool and mild growing season which has culminated in wines of delicacy and poise. Winemaking The fruit was picked on the 11th April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static fermenter for a further 13 days of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 9 months before bottling.
