Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Machine harvested at night , crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish.

Grape variety - 89% Cabernet Sauvignon, 8% Cabernet Franc, 3% Petit Verdot. Oak maturation - 100% of the wine is aged in French oak barriques (20% new) for 15 months. Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.

The perfume is driven by a combination of violets, ripe cherries and cedar notes. A powerful palate of plums, black currants andnuances of bay leaf. Food Matches: rack of lamb, roasted vegetable lasagne ora juicy rib-eye steak. Peak drinking: Ready to enjoy on release but cellaring upto 10 years from vintage will find further complexity.

TASTING:Stunning vibrant fruit aromatics blackberry, cassis, and forest fruits. There's a hint of earthiness and spice adding complexity and a savoury element. The tannins are fine and long and drive the palate. Hint of red berries and pomegranate linger on the palate. The oak is intergrated and classy. WINEMAKING:Machine harvested fruit, crushed and destemmed. A portion of the fruit fermented in open-top fermenters, and the main portion in a larger format red fermenter. Macerated on skins for 10 days before being pressed into temperature controlled tanks to finish fermentation. Aged in 15% new oak, mostle French and some Hungarian for 18 months.

Maturation in seasoned French oak gives a subtle background of vanilla and spice. Palate: Medium bodied and vibrant palate sums up this wonderful expression of Wilyabrup Cabernet. The palate is fresh and full of vibrant mulberry, cassis and black cherry flavours. Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Winemaking The fruit was picked on the 2nd and 24th of April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static and open fermenter for period of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 10 months before bottling.

Quality Margaret River Cabernet at an affordable price! Ringbolt Cabernet Sauvignon has rich fruit with overtones of mulberries, chocolate and a hint of violets. It is well balanced with subtle oak, some cedary, herbal notes and fine tannins on the finish.

Howard Park Leston Cabernet Sauvignon, a wine of good structure and power. Bright red crimson in colour. Red currant fruits, a hint of violets and oak on the nose. This full bodied wine had great elegance on the palate and a lengthy finish. No doubt one of the best example of the region.
