Distilled in small batches in a custom built 230L Müller copper still, fresh ruby grapefruit, native aniseed myrtle, cubeb pepper and tonka beans are used to create this Gin. A smooth, well-rounded Gin for making classic cocktails and controversy. Perfect in a G&T with a ruby grapefruit garnish, and holds its own in a martini or negroni.

This is a classic, juniper-forward London Dry style gin. Amongst the recipes thirteen botanicals is a nod to Scotland, with native cobnuts and black mulberry. Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. Enjoy straight up, with tonic, with soda, or in a cocktail.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.
