This is a 60-40 blend of Cabernet Sauvignon and Merlot. The wine is elegant and refined showing a clear red-purple colour; a fresh, bright and breezy wine, with red fruits to the fore and balanced tannins to hold the structure together.

Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Oak though present is not imposing itself. Remarkably fragrant. Savoury notes in the tobacco and cedar zone add interest. Complex structure and great length created by the blend of varieties, a wine to try now but also one to cellar.

The perfume is driven by a combination of violets, ripe cherries and cedar notes. A powerful palate of plums, black currants andnuances of bay leaf. Food Matches: rack of lamb, roasted vegetable lasagne ora juicy rib-eye steak. Peak drinking: Ready to enjoy on release but cellaring upto 10 years from vintage will find further complexity.

Elegant flavours of dark cherry and star anise are supported by sweet tannins, the typical line and length of this variety enhanced by a fine backbone of cedary mocha oak.

This wine has an elegant bouquet with red and dark berry fruits surrounded by supple tannins and neatly integrated oak.

TASTING:Stunning vibrant fruit aromatics blackberry, cassis, and forest fruits. There's a hint of earthiness and spice adding complexity and a savoury element. The tannins are fine and long and drive the palate. Hint of red berries and pomegranate linger on the palate. The oak is intergrated and classy. WINEMAKING:Machine harvested fruit, crushed and destemmed. A portion of the fruit fermented in open-top fermenters, and the main portion in a larger format red fermenter. Macerated on skins for 10 days before being pressed into temperature controlled tanks to finish fermentation. Aged in 15% new oak, mostle French and some Hungarian for 18 months.

The palate is fresh and full of vibrant mulberry, cassis and black cherry flavours. Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Winemaking The fruit was picked on the 2nd and 24th of April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static and open fermenter for period of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 10 months before bottling.

This Margaret River is ripe, complex and concentrated showing classic Margaret River Cabernet characters of cassis, mulberry and bay leaf. There is balanced cedar oak along with cocoa powder, damp earth and gravel dust. The palate is full and structured with fine grain tannins. There is cassis, cocoa, bay leaf, damp earth and cedar oak. The wine has a firm, long finish with enough concentration and structure to provide medium to long term ageing. Match with traditional roast lamb with rosemary. Since the first release in 2002, Fraser Gallop Estate have gone from strength to strength, picking up a Jimmy Watson Medal along the way. The Cabernet Merlot is a lovely example of the blend which is so at home in Margaret River. Leafy mulberry on the nose with cassis in the background, and a soft , flavoursome palate. Delicious!

This Cabernet Merlot continues to win wide acclaim due to its dark purple colour and its lifted aromas of raspberries and black forest cake. Rich berry flavours are well balanced by a tight tannin structure typical of quality Margaret River Cabernets.
