Shiraz & Cabernet Sauvignon is another match that delivers something greater than the sum of its parts. Blend the rich upfront flavour and a lingering aftertaste of Cabernet, with the silky softness consistency of Shiraz, add a splash of Merlot, and you have a Rouge of super delicious deliciousness. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.
Amelia Park Trellis Cabernet Merlot
It has a lovely bouquet of dark berries and mocha with a soft fruit-driven palate of red currants and plums. The palate is soft, juicy and lingering. A number of parcels are sourced for this blend, once the grapes have reached optimal ripeness the fruit is harvested during the cool of night for delivery to the winery. The fruit is destemmed and sent to static fermenters for a long cool fermentation. Once pressed off skins the wine is pressed off to oak barrels for 9 months maturation of 9. Finally the wine is removed, carefully blended and prepared for bottling. Amelia Park is a boutique producer located in the Margaret River wine region of Western Australia. A full-bodied wine with fragrant blackcurrant with fine cedar-like oak aromatics. The plate is rich in ripe dark fruit characters and a subtle oak characters. A well balanced mouthfeel is complimented by light dusty tannins, perfectly balanced by natural acidity and a clean finish. Pair with a grilled beef burger or steak with hand-cut chips.
Xanadu Circa 77 Cabernet Sauvignon
Deep red with ruby hues. The wine exhibits vibrant, characteristic aromas of ripe blackcurrants, blueberries, and dark plums meshed with hints of bay and liquorice and subtle spicy, toasty oak. The generous palate is packed full of juicy fruits of the forest, cassis and chocolate characters. Medium to full-bodied, the fleshy fruits are supported by moreish, supple and ripe tannins. A balanced wine, with a persistent fruit finish with beautiful regional savoury inflections of bay, black olive and liquorice.
