The GlenAllachie Distillery, situated in Aberlour in Speyside, was established in 1967 and designed by William-Delme Evans, with construction carried out by Mackinlay McPherson. The distillery was meticulously designed to be almost entirely gravity-fed, reducing energy consumption. After Mackinlay McPherson became part of Invergordon in 1985, the distillery was mothballed until Campbell Distillers acquired it in 1989 and recommenced production in April of that year. In 2017, The GlenAllachie Distillers Company Limited was formed by Billy Walker, Trisha Savage and Graham Stevenson, who released their first core range of single malt whiskies in July 2018 and launched MacNair's Lum Reek in November of that year. The distillery opened its doors to visitors in May 2019 and has won numerous awards, including the Visitor Attraction of the Year for 2022. The GlenAllachie Distillery continues to innovate, releasing a 15-year-old whisky in April 2022 and a celebratory trilogy of Speyside Single Malts in honour of Billy Walker's 50-year career. In January 2023, they introduced The GlenAllachie 2012 Cuvée Wine Cask Finish and in March 2023, they released three new expressions, highlighting their commitment to innovation and excellence in the whisky industry. The GlenAllachie distillery is known for its impressive collection of casks, with over 50,000 casks spanning across 16 on-site warehouses. The passionate team at GlenAllachie has complete control of the end-to-end maturation process, allowing them to make decisions for all the right reasons. They use a variety of casks including ex-bourbon, ex-sherry, and virgin oak to create unique and complex flavours in their single malt whisky. Billy Walker, the Master Blender of The GlenAllachie Distillers Company, has transformed the distillery since acquiring it in 2017. With a 50-year experience in the Scotch Whisky industry, Billy has received numerous awards, including Master Distiller/ Blender of the Year (World Whisky Awards, 2020) and was inducted into Whisky Magazine’s Hall of Fame in 2021. GlenAllachies very first bottling of The GlenAllachie 10 Year Old Cask Strength happened by chance. In 2017, whilst reviewing parcels of stock from 2007 and 2008, their Master Distiller Billy Walker was so delighted by the balance and depth of the samples that he immediately decided to add a younger expression to our core range. Their fourth batch was awarded ‘World’s Best Single Malt’ at the World Whiskies Awards 2021, so the bar has been set high as they introduce their sixth release. The GlenAllachie Cask Strength Batch 9 is an intense mahogany in colour with a nose bursting with ripe red berries, hazelnuts and heather honey, with hints of orchard fruits, cinnamon, spice and gingersnaps. The palate has lashings of dark chocolate. honeycomb and caramelised demerara sugar followed by notes of treacle. mocha and ginger, with plum and toffee on the finish. Batch 9 is bottled at 58.1%, non chill filtered and natural colour.

The Shinobu 15 year old Mizunara Cask Whisky is hand crafted by master distiller, Mr Usami. First matured in ex-Sherry and ex-Bourbon casks, it is then finished in Japanese Mizunara oak. Mizunara is an expensive oak which is hard to craft into barrels, but it imparts incredible flavours on the spirit of Shinobu. This pure malt has been maturing for no less than 15 years which has allowed the spirit to take on some very inspiring characteristics. The result is a unique fusion of flavours and dynamic explosion on the palate yet so smooth and easy to drink. Deep rich in colour and complex in flavour, mellow oak wood aromas lead to flavours of honey and molasses, hints of blueberry and deep tones of the Mizunara oak. The palate has subtle ripe fruit, lemon zest, leather and cinnamon with a hint of sweet malt and aromas of fruity oak barrels.

Home grown barley, craft of the cooperage of the barrels, the malting floor where the grain is prepared, the copper stills that create the base spirit and the malt master who oversees the refining of the end product. The Balvenie French Oak is a vibrant single malt finished in casks previously held wine from the French Charentes vineyards. Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Sixteen years of maturation in American Oak casks brings an abundance of vanilla spice and warm honey notes. The finishing in Pineau casks brings energizing grapefruit, geranium, glazed fruit and ginger. This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials. The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif. Beautifully balanced light floral notes from lotus and geranium flowers dance between hints of fresh meadow grass and pealed apple skin. On the palate there is an energising zing from tangy lemon rind and grapefruit meet the delicate subtle sweetness of glazed fruits and spice from root ginger, with a refreshingly concise finish.

Not strictly a Japanese whisky, Togouchi source grain whiskies from Scotland & Canada and aged them in Japan. This is a blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. Nutty, spicy whisky with a lovely butterscotch mouth feel. On the palate it expresses vanilla sweetness and a fine peat iodine, with hazelnuts and chocolate on the finish. Almost feels like a whisky/bourbon hybrid.

The name was officially recognized by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Part of the Kavalan Solist series, matured in superior-quality brandy casks individually and meticulously selected to create uniquely fruity characteristics. This cask strength single cask malt whisky is non chill-filtered with natural colour to retain the fullest flavours.

Madeira is a rich fortified wine made on the Portuguese Madeira Islands, where the wine is aged and oxidized through heat. Kavalan’s tropical new make extracts the many rich fruit notes from the wine cask to create an irresistibly sweet yet delicate whisky. This cask of Solist Madeira, cask number D150514027A, was chosen and bottled exclusively for Australia, with only 211 bottles released.
