This Gris from the home of the long white cloud offers creamy pear notes, honey and hints of caramel with citrus and vanilla. The Winemaking: Once harvested the fruit was crushed and pressed; the juice was cold settled and racked to ferment. The ferment was carried out with selected yeast and stopped with some residual sugar. Post fermentation the wine was stabilised, clarified and bottled. Grapes were harvested in early April 2019 at the optimum ripeness. The juice was fermented at cool temperatures to retain the elegant, fresh flavours. No oak was used in the winemaking process to ensure the vibrant regional characters were captured.
