Papagiannakos Retsina
Retsina hails from the hills of Attica and Central Greece and was traditionally made from the Savatiano grape variety. Vassilis Papagiannakos has taken it upon himself to raise the profile of this much-maligned style of wine. He does this by sourcing fruit from old, well-sited Savatiano vineyards. He then adds very controlled amounts of pine resin during a temperature controlled fermentation to ensure a delicate and well integrated blend of flavours and complexity.

Pulpo Albariño
This wine is made from Albariño grapes carefully grown in the vineyards at Val do Salnés (valley of the salterns) in Galicia, where most vineyards and wineries congregate under the Denominación de Origen Rías Baixas. This grape variety is characterised by its small clusters, early ripening and medium vigour. They are remarkable for their pleasantly impressive fine and distinguished floral and fruity aromas, of a medium intensity and a medium-long finish.

Giovanni Rosso Etna Bianco
There’s nothing mysterious or untoward in the winemaking for this beauty. It’s kept on skins for a short period, then pressed, juice fermented over a couple of weeks, and aged on lees in stainless steel for five months. As with all Giovanni Rosso’s wines, this is about site. Site, and the ancient grapes (mostly carricante) that are thought to have been grown on the slopes of Mt Etna for at least 1,000 years. So they’ve had time to acclimatise. It’s a gorgeous, zesty-herby white, soft and pillowy and all propped up by a precise and racy acidity. It’s super long, and just bordering on mouthwatering. Quite subtle flavours flitting around the edges, hiding in the shadows and peeking out when you’re not concentrating.
