Our Olorosso Casks Batch 4 & 5 won Bronze at the 2019 Australian Distillers Awards. Being one of only a handful of Single Malt Whisky distilleries in the world who grow their own barley and have access to pristine spring water on site sets us apart when considering where our unique flavours are developed. A 10 year journey in the making... This gin is the distillers masterpiece featuring suspended finger lime caviar from the distillers 80 acre farm at Kurrajong Heights. These little balls of limey goodness pop in your mouth when you bite them releasing an aromatic burst of pure citrussy gin an experience like no other! Also known as "Snow Dome Gin" it makes the perfect gift for those who are hard to buy for and has a spectacular presence with the suspended finger lime caviar swirling and magically suspending in the bottle. A super smooth gin featuring a medly of Hawkesbury grown citrus. Tahitian lime leaf and Kaffir lime leaf also grown on the distillers farm are balanced with aromatic Navelina oranges & juniper from the highest mountains of Bulgaria. Finger lime gin is hand made in micro batches of just 43L using spring water from our farm. Each bottle takes over 1 year to make and mature from growing the fruit to distilling the gin and infusing the finger lime caviar so that when you bite those little pops you get a burst of 40% alcohol gin which is different to the gin they are suspended in. Serve with tonic and ice to make the F Bomb Gin & tonic you will not be disappointed.

From our meticulous approach to selecting only the finest peated barley sourced from Inverness, Scotland, Hellyers Road has cemented its reputation as being Australia’s foremost peated whisky producer. Our peated grain is sourced from Bairds Maltings in Scotland – renowned for supplying many of the peated whisky distillery icons. This release represents our passion to continuously craft world class peated single malt whiskies of incredible distinction and quality. A gently, but distinctly peated whisky with a blended mash bill of unpeated Tasmanian malted barley and traditionally peated malt, aged for seven years in first fill American Oak ex-Bourbon casks. A “gateway” peated single malt - luring in many who, until trying it, thought they did not like peated whisky.

This sherry cask single malt was matured for 10 years in traditional 250 litre Oloroso casks from Jerez (Spain) and represents the oldest fully matured sherry cask whisky known to be released by any Australian distillery to date and continues Hellyers Road’s legacy of producing sherry cask whiskies of incredible distinction and quality. Toffee, treacle, orange zest, brioche and clove on the nose. Palate coating with rich caramel, honey, subtle chocolate and stewed fruits. The finish is incredibly smooth and elegant with morish sweet notes.

Single cask malt whisky from Overeem in Tasmania aged in a French Oak Sherry quarter cask. This smaller cask leads to greater interaction between wood and liquid during maturation and results in a more intense whisky.

Tasmanian Single Malt Sherry Cask Matured. Colour: Dark Copper Nose: Caramel & raisins Palate: Lifted floral notes, caramel and dried fruit sweetness with some white pepper savory hints Finish: Delicious long and slightly dry finish which is indicative of some very fine old wood. A slightly smokey note that suggests peat but comes from the heavy cask charring

Finish: Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles
