Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. Mouthwatering mandarin, maple, meadow honey, macadamia, and marizipan. Bright and juicy notes of black cherry, orange blossom, and toasted oak, topped with vanilla bean whipped cream, just delicious.

Uniquely Australian craft vodka distilled with hints of Grey Gum Eucalyptus

Locally sourced, Hippocampus vodka is distilled in Western Australia. The vodka is twice distilled and not filtered, which lends a smooth richness and subtle flavour. Its full body and depth mean it lends itself well as a cocktail base.

Our Bespoke Gin is made from scratch in small batches in Tasmania. Carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of Tasmanian grown (fresh Lime and Rose) and internationally sourced botanicals (twelve total Botanicals)

Packed with brandy-buzzed pudding, dried fruit, oak and a hint of smoke on the palate, our limited-release Brandy & PX Sherry Cask will warm you from tongue to toes. From a thoughtful selection of our Bothwell Distillery’s bourbon, sherry and white oak casks to a balance of both Seppeltsfield PX Sherry and Lark brandy barrels comes a mosaic of a single malt both quaint and comforting. Full of dark forest fruits, bright citrus peel and Tasmanian brandy blanketed in toasted oak, this indulgent little dram is as a slice of fruitcake and a cuppa. A sticky, plummy, homemade fruit cake in a glass, Orange peel-infused caramel pudding topped with spices. Dried fruits play off the rich, earthy oak.

The crystal waters of Lake Saint Clair are some of the worlds most pure. Swept by wild Antarctic winds, these pristine waters meld gently into the River Derwent, and down through Lawrenny Estate. Saint Clair Vodka incorporates these pristine waters, truly encompassing the purity of the region and delivering a crisp and clean palate. With a very careful selection of botanicals, such as rose buds found in the gardens, herbaceous thyme and classic lemon zest, we ensure that the signature style of Lawrenny is found in each glass.

Colour: Dark Copper Nose: Caramel & raisins Palate: Lifted floral notes, caramel and dried fruit sweetness with some white pepper savory hints Finish: Delicious long and slightly dry finish which is indicative of some very fine old wood. A slightly smokey note that suggests peat but comes from the heavy cask charring

Palate: From a bright and sweet opening the flavours build across the palate to a rich, clean alcohol-driven crescendo culminating in a big, warm and comforting glow of spicy tannin hints and peach flesh. Finish: Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles
