Lark Tasmanian Single Malt Whisky is proudly unique in character and style. Entirely made by hand, Lark consistently distills some of the worlds most prized Whiskies, with no more than 100 litres at a time. Distilled in locally crafted copper-pot stills, this exceptional classic cask is the flagship product of the Lark Distillery. This Whisky is best described as a complex mix of vanilla-caramel-maple syrup with some slightly spicy, floral notes and gentle hints of fresh pepper on a flavourful lingering finish. Distillers Release is a bespoke gin is made from scratch in small batches in Tasmania. carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of locally grown (fresh lime, lemon and rose) and internationally sourced botanicals.Layered notes of green cardamom, fresh lime and lemon,juniper (organic), coriander, a hint of white peppercorn and three cuts of rose makes this gin ideal for creating your favourite cocktail of sipping slowly over ice.

Highlands is a refreshing and crisp Gin, with notes from the unique blue cypress to the bright fruitiness of the grapefruit, orange and buchu, all while an ever present mint note lingers over the palate. The sweet earthiness of ginger, cubeb pepper and grains of paradise add a gentle bite of piquancy while chamomile provides weight and sweetness. Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.
