Pine needle, brushed rosemary, lemon oil, earthy root extending into fragrant pepper. The palate is immediately fragrant with a bright citrus character up front. Oily and intense, the juniper is prominent, supported by the earthy undertones of angelica and orris root and extended by the addition of wooded spices and pepper. The finish is long and complex with a rich creaminess that dries out almost immediately. There is a changing dynamic of juniper, first bright and fragrant that develops into an earthy more resinous finish. The length is full and luxurious. We treat the juniper in three distinct ways, partially steeped, partially in the pot and partially in the vapour, in carefully selected balance, to capture both the bright and the earthy qualities of this wonder berry. Well, it's actually the world's smallest conifer, but let's not get too technical. The copious amounts of juniper give you the best thing about gin in spades. But juniper is a force that needs managing. A carefully selected bouquet of botanicals honours the brilliance of the juniper by complementing it, rather than overpowering it. Australian coriander provides a brighter citrus and less earthiness than its English or Indian counterparts. A predominate fresh lemon citrus influence with a touch of fresh lime and liquorice lifts it up over a root base of angelica and orris. Native pepperberry provides a balancing savoury element without the heavy menthol finish of traditional peppers. A hint of cinnamon the just the right amount of warmth.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Created to capture as purely as possible the essence of the Australian summer garden, this is the original Garden Grown Gin by Grown Spirits. The French perfumers' time-honoured technique of enfleurage is used to extract the delicate scent and flavour from the hero botanical Murraya. It, along with Chamomile, Sage, Rose, Angelica, Orris Root and of course Juniper bring this floral gin alive. On the nose, there are hints of jasmine, sweet honeysuckle and orange blossom.

Aqua Vitae: Raspberry Gin is our latest gin; a sweet yet refreshing mixture created with Tasmanian-grown raspberries. These ingredients combine to create a harmonious taste that is rich on the palate, bringing a sweet and sensuous experience with each sip. With its rich red colour, and sweet raspberry finish, this gin can be enjoyed by itself on ice, or with a splash of sparkling water.

This guys bringing Juniper, and lots of it! Weve done this by using Macedonian berries distilled on our very own Copper Pot Still, named Ron. Who better to compliment our Juniper than the delicate flavours of Strawberry and Mint, along with all the other usual suspects. Weve achieved this via new world techniques being a Rotary Evaporator, otherwise known as cold vacuum distillation. Boiled at 30 degrees my friends! Keeping all that fresh flavour in... Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting. I can not wait for you to experience the pull between the sunflower seed and quinine, the cinnamon hit, citrus and perfectly balance juniper backbone we've so painstakingly balanced.
