This luscious Champagne has a crisp structure and is loaded with red grapes. It is well-balanced, smooth, and generously fruity, and it is ready to drink. This blend of 75% Pinot Noir and 25% Chardonnay is rose petal pink in colour, with persistent mousse and a chain of fine bubbles. On the nose it is fresh and generous with intensely complex aromas of red fruit, wild cherry, wild strawberry and raspberry. On the palate there are delicate red berries and structure from the Pinot Noir while the Chardonnay bring freshness and balance.

Chanson Du Vent Tasmania Sparkling Non-Vintage

Pale straw in colour. Aromas of apples and citrus along with a bready note. Refreshing acidity adds drive to a generous mid-palate with an everlasting long finish.

Brown Brothers Patricia Pinot Noir Chardonnay Brut

A light straw colour with a fine persistent bead. The nose is lifted with a rich yeast autolysis character and hints of citrus and apple. The palate is full bodied, complex and rich with prominent lemon and lime flavours and a bready character that lingers. The palate is creamy and elegant with a crisp, dry finish and refreshing acidity.

Pooley Butcher’s Hill Cane Cut Riesling

Pooley Wines has an historical property and two separate vineyards at each end of the Coal River Valley in southern Tasmania. The Coal River Valley has developed a worldwide reputation, and is ideally suited, for the production of cool-climate wines such as Pinot Noir, Riesling and Chardonnay. Members of the Pooley family have been actively involved in the business for three generations. Their longstanding passion and commitment to fine wine are your assurance of un-compromising quality. The first sweet Riesling to be made from the Butchers Hill vineyard at Richmond, adjacent to the cellar door. The fruit was handpicked in the early hours of the morning. The fruit was whole bunch pressed with juice then returned onto skins and soaked overnight. An inoculated ferment (PDM strain) for a total of 15 days with 5 months maturation on fine lees in stainless steel prior to bottling.

Josef Chromy Non-Vintage Sparkling

A fresh, lively palate of green apple and lemon with hints of toasted biscuit. Pinot Noir (67%) and Chardonnay (33%) sourced from the Josef Chromy's estate vineyard at Relbia in northern Tasmania. Whole bunches of hand-picked fruit are gently pressed to ensure delicate flavours. After primary ferment the wine is tiraged with no malolactic fermentation and disgorged after 18 months on yeast lees to retain crisp, fresh flavours.

Taittinger Brut Reserve

Taittinger Brut Reserve contains a blend of 40% Chardonnay and 60% Pinot Meunier. A golden-yellow beauty with an expressive aroma of fruits, flowers and vanilla pod. The palate is delicate and equally fruity with hints of honey for a touch of sweetness.

Highland Heritage Patrono Series Cuvee Brut Sparkling

The colour has a slight tinge of pink from the Pinot Noir portion of the blend. The palate is well structured and elegant, with crisp apple and citrus elements from the fresh acidity of the grapes. This freshness is complexed with the yeasty nuttiness that is derived from 24 months of aging on the yeast lees in the bottle. The dosage sweetness added on disgorging is minimal and balances the finish on the palate perfectly. Together these characteristics produce a wine of great complexity that fill the mouth over the length of the whole palate. The overall richness weight and structure of the wine will see it greatly improve with further careful cellaring over the next 10 years.
