An exceptionally smooth gin that offers the gin fanatic someting different with hand picked Austalian Kakadu Plums. Adding to the complexity of juniper are Angelica root, cardamon and a seclection of other botanicals that are balanced on the palate with a medium/dry finish. A dry-styled gin based on an original London dry gin recipe but with the original ingredients including mango leaf, Daintree vanilla and Nerada tea from the Atherton Tablelands alongside our own Australian native botanicals. The structured blend allows it to stand out from any other gin on the market with its unique tropically floral taste. A hint of juniper to start off and then the intensity of the other flavours start to come through. Vanilla, mango leaf and then a hint of tea tannin topped off by a peppery fragrant aftertaste. Tidal Lines is made from the classic Headlands Distilling Company gin recipe and then infused with native Illawarra Plums over a ~12 month time frame.This gin combines flavours of fresh juniper, rainforest lime, Illawarra Plum, cinnamon, angelica root, orris root and many others!

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. Enjoy straight up, with tonic, with soda, or in a cocktail.

The Craft & Cos Collingwood Dry Gin is an ongoing conversation with the seasons. We are always juniper forward, true London dry style, with native and traditional botanicals.

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Vickers is a beautifully flavoured Gin subtle hints of delicious juniper berries. Dry but refreshing this Gin, unlike others is enjoyed most in a tall glass rather than short and is best accompanied with a traditional twist of lemon and tonic water.
