A dry-styled gin based on an original London dry gin recipe but with the original ingredients including mango leaf, Daintree vanilla and Nerada tea from the Atherton Tablelands alongside our own Australian native botanicals. Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.

Born from the belief well-crafted things have no fear of time, this gin is made with equal parts expertise and attitude. It takes a lot of effort to realise, but both values are worth waiting for.

Lets raise this bounteous bottle to Ginger Mick. Legendary larrikin and official bluey of Victorian Little Lon - written into Australian poetry folklore by C.J Dennis in the early 20th Century. Would he have approved of this lordly libation? This nectar, with its bright bouquet of orange and grapefruit, its notes of ginger and juniper emerging tellingly on the finish.
