Established in 1995, Toolangi Vineyard is in the Yarra Valley adjoining the Toolangi State Forest. This single-site vineyard on fine clay loam produces wines with distinctive personalities, each wine showing a strong sense of place. The vines were cropped low, and the fruit was hand-harvested from 20-year-old vines of MV6 Pinot Noir clone. The fruit was destemmed as whole berries, with 5% left as whole bunches. There was a short cold soak prior to fermentation and the wine was then left on skins for 14 days. It was then pressed to French oak (5% new) for malolactic conversion and left on lees in oak for 10 months. “Light but satisfying. Delicious spice notes, sweet and roasted, with the tang of red cherry and cranberry flavours. It has both quality and complexity written all over it but, responsibly, it’s also the kind of pinot you just want to guzzle. It has that out-and-out drinkability. Chandon Vintage Brut is a fine elegant sparkling produced from grapes sourced from multiple cool-climate regions, with a slant towards quality Yarra Valley fruit. A reductive, flinty aroma overlays quince, nashi pear, pine nut, citrus blossom and lemon zest. Toasty brioche and chalky mineral aromas present in the background. An excellent palate, with primary fruits of tangy lemon and kaffir lime, backed up by secondary flavours of fresh pastry. Tightly wound acidity with remarkable freshness.

The Chardonnay grapes used to create Vintage Blanc de Blancs were picked, pressed and then fermented to retain intense fruit flavours. The resulting wine shows a bright straw colour with light green highlights and a beautiful bead. The fragrant bouquet is perfumed with lovely aromas of cream and peaches, with light suggestions of citrus and honeysuckle. The elegant palate is filled with peachy flavours and zesty lemon acidity, offering a silky mouthfeel and a clean finish. This lighter bodied Blanc de Blancs tastes excellent with sashimi, sushi, and foie gras terrine.

A selected blend of cool-climate Pinot Noir from our premium vineyard sites. Whole berry bunch fermented and matures in French oak casks for 9 months, displaying classic yarra Valley fragrance, texture and elegance.

Hand picked fruit from select parcels from our best blocks. The blocks have an easterly aspect that enables them to avoid harsh afternoon sun. Picked early in the morning, hand sorted, destemmed and fermented in small batches. Fermented over two weeks with minimal intervention. Wines were pumped over at the start and end and only some gentle plunging towards the end of ferment. This allows the wines to retain purity of fruit and better reflect the vineyards they were grown in. After 6 months in older French barriques and hogsheads the wine was bottled with minimal sulphites added. The wine has aromas of red fruits, cherries and floral notes. An earthy palate with an undertow of dusty cherries, red berries and pomegranate. Some fine velvety tannins and bright acid make this a savoury and structural wine.

A finer-boned example of Warramate Pinot Noir, which faithfully reflects the seasonal conditions & site from which it was drawn. Subtle notes of strawberry, black cherry & fennel spice weave amongst a perfumed stalky lift & supporting bacony oak.

The Yarra Valley is renowned for its excellence in Pinot Noir and this expression is no exception. In the glass: Medium garnet red. On the nose: Ripe dark berry fruit. On the palate: Bold, quite powerul red plum and raspberry fruit with some background stalky, herbal elements. Firm and dry yet flavoursome and varietal.

A bright and complex aromatic profile displaying notes of pomegranate, dried strawberry, star anise and cranberry intermingle with hints of blue fruit, crushed violet, fresh tobacco and truffle. A finely structured palate offers both textural generosity and clarity of fruit expression. Red currant, dark cherry and cinnamon raspberry characters integrate well with supportive oak spice. Refreshing natural acidity gives the wine drive and line leading into a long and persistent finish.
