Forester Estate Margaret River Georgette Sparkling Brut

Palate - Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Winemaking The Chardonnay fruit is gently pressed off skins with a series of press fractions going to separate holding tanks for later assessment. The juice is settled bright and fermented cold with a neutral yeast strain in stainless steel. No malolactic fermentation takes place, so as to obtain a finer, tighter acid structure. The wine was then bottled on the 23rd of May 2019 with a dose of active yeast and sugar (known as ‘tirage’) to encourage the secondary ferment. The bottle ferment lasts approximately six weeks after which the tirage sparkling wine rests in storage for four years gaining complexity from contact with the yeast lees. When deemed to be balanced and with sufficient autolysis character, we send the bottles for riddling and disgorging where the yeast plug is removed and the cork inserted. This wine was disgorged on the 7th of July 2020. Storage/Bottling - The unique nature of this sparkling wine is that bottling occurs as part of the winemaking process early in the wine’s life. In the case of the Georgette, the final disgorging and packaging process occurs four years after the wine is first put to bottle. Heavy grade sparkling glass, stylish labeling and the traditional white hood of the Forester brand complete the elegant package.

Winemaking exudes minimalist technique to allow expression of site. Bright staw in colour. Lifted citrus, white peach, lemon blossom and almond with intriguing complex elements of fine French oak. A precise palate of harmonious oak teamed with intense stone fruit, citrus and flint like palate, with a long flowing texture leading to fine acidity and spiced oak nuances.

Highly perfumed with lavender, green olives in brine, mastic verging on the smell of just-cut raw pine wood. There’s a lot going here: textural with barely ripe Packham pears, raw quince flavour and phenolics with a slip of creaminess. Super dry on the finish, super delicious to drink. - Special Value, Jane Faulkner, Halliday Wine Companion, 94 Points. Green apple, apricot, green pear, lemon myrtle and honey, a coverlet of spicy oak. It's juicy, lots of flavour here, but tight too, and the texture is excellent offering some chalky grip and glossy feel, and it sports a cinch of dried herb and quinine bitterness on a long finish. It's powerful Chenin, yet it's balanced and controlled. Gee, this is terrific wine. - Gary Walsh, The Wine Front, 94 Points.

By Farr Chardonnay

Gary Farr is still one of Victoria's true Chardonnay maestro's and his Chardonnay By Farr is another example. Taken from the original By Farr vineyard, this is a clearly a wine of true clarity and finesse. Flavours of melon and hints of spice with wonderful oak integration mean this wine is simply delicious upon release, but handle some careful medium-term cellaring.

Cape Mentelle Chardonnay

The citrus rind and grapefuit lead the palate to an overall fine yet textural journey. Cape Mentelle Chardonnay had this distinctive minerally line too, apparent with focussed refreshing acidity. Faint nuancesof soft nougat and cashews also add to what is a harmonious balance and an elegant and length finish.

Margaret River Chardonnay

Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.
