The mid-palate starts off with chocolate notes, but the peat soon takes the lead once again.The finish is long, silky. Extremely mature, it overflows with ripe fruit (pear, Mirabelle plum, apple). The peat starts taking on an herbaceous and malty character, while the salty flavours gives the finish plenty of depth and coastal freshness. The final nose offers menthol, spicy (coriander, dill) and earthy (leather, chestnuts) notes.

Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying their barrels for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the winter. The American whiskey is aged in second-fill bourbon casks. It has a rich, soft sweetness which is remarkable.

Akashi whisky is the only whisky in the world that is made by a Toji (grand-master in the art of sake making) by implementing sake-making methodologies into the whisky making process. The distil pot used is smaller than those used by both Scottish and other Japanese distilleries, which in turn, decreases the levels of fusel alcohol. As a result, Akashi whisky does not require as long of an ageing process, while its core malt (cask strength) is smooth and delicate.

Nose: Apple drops, fresh citrus zest, creamy and luscious toffee undertones with banana, apricot, melon and creamy red raspberries. Palate: Sweet peach on the fore with pear and a bright fresh citrus zest. Malt undertone with creamy vanilla underneath Finish: Long and creamy with hints of pear and citrus zest remaining.

The Pasilla Mixe chilli is the hero here. Sourced directly from the Mixe farmers on the Sierra Norte mountains, we macerate the smokey chillis in a special alcohol made from Danish heritage Purple Wheat and organic malted barley. After distillation those same chillis are then used to make a Pasilla Mixe kombucha which is also distilled and then blended in to adjust the alcohol percentage.
