Rack and returned three times during the maturation of 15 months 100% new oak, Shiraz Burgundy coopered French oak, Cabernet Bordeaux coopered French oak Alan Hickinbotham established the vineyard bearing his name in 1971 when he planted dry- grown cabernet sauvignon and shiraz in contoured rows on the sloping site. He was a very successful builder, this his first venture into wine, but his father, Alan Robb Hickinbotham, had a long and distinguished career, co-founding the oenology diploma at Roseworthy in 36. In 2012 Clarendon, and the stately sandstone house on the property, was purchased by Jackson Family Wines; it is run as a separate business from Yangarra Estate Vineyard, with different winemaking teams and wines. The Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.

This iconic label by Yalumba has a proud history from it's first release in 1962. Quite possibly the quintessential Australian Shiraz Cabernet blend, 'The Sig' shows vibrant Barossa aromas of dark fruit and spice and a concentrated palate that is long and deeply flavoured. With the ability to age wonderfully well, The Signature is a deserving part of any wine aficionado's collection.

Domaine de Chevalier Rouge Grand cru classe

Chateau Pape-Clement Cru classe

Chateau Pape Clement located in Pessac Léognan is part of Bernard Magrezs stable of estates. The 32.5 ha vineyard is planted to Cabernet Sauvignon and Merlot on gravel, sandy and clay soils. Fruit is handpicked and hand sorted before undergoing a cool pre-ferment maceration and whole berry fermentation in wooden vats. Each parcel is fermented separately. The wines are manually punched down and run off into 100% new French oak barriques where they mature for 18-20 months. Bernard Magrez is credited with turning around quality at the Chateau, including introducing rigourous vineyard selection and implementing state-of-the art winemaking. As a result, Chateau Pape Clement is now considered one of the finest producers in Pessac-Léognan.

Chateau Brane-Cantenac 2me cru classe

Having been through many iterations since its establishment in the early 17th century, what we know today as Chateau Brane Cantenac has well and truly settled into itself and become something extraordinary. Taking its name from the man knows as the Napoleon of the Vineyards, the Baron of Brane, who purchased it in 1833, the chateau has passed through several hands, finally coming to rest in the hands of Lucien Lurton in 1956. Under the Lurton family large portions of the vineyard were replanted, vine densities increased, drainage systems improved and the plantings evolved into their current varietals. The 2016 release has garnered a huge response from critics, with James Suckling naming it one of the best ever from the chateau, and Jancis Robinson praising its Cool, unforced and sophisticated delivery as Very competent indeed.

Chateau Cantemerle

It would be difficult to find a more classically Médoc wine than this great Cantemerle, with its sustained power and refined elegance. A very deep color and subtle aromas underscore its youth. Once in the mouth, this rich and full-bodied wine releases notes of coffee, olives and licorice which are emphasized by an opulent and harmonious length. A fine wine which marries fullness and delicacy, while avoiding heaviness and excessive oak.

Penfolds Bin 407 Cabernet Sauvignon

Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Houghton Jack Mann Cabernet Sauvignon

One word - legend. Jack Mann served Houghton for a remarkable 51 consecutive vintages. His determination to create wines of intensity, elegance and regional character have inspired a generation of Australian winemakers to achieve great things. Simply one of this country's greatest Cabernets, this wine is not just single vineyard fruit, the selection process is so rigorous that often it is just a few rows from the Justin Vineyard. Such is the reverence for that great man - Jack Mann.
