Caffo Vecchio Amaro del Capo

Chandon de Briailles Vin de Liqueur Pousse au Crime Non-Vintage Non-Vintage

Outside of the core range, there’s always something interesting to taste when you visit Chandon de Briailles—be it François de Nicolay’s négoce sans soufre wines, or something like Christian Knott’s skin-fermented La Vie est Belle. Even so, we were a little surprised to be presented with this Burgundian ‘Port’. This is drawn from late picked fruit in the very warm 2013’s harvest—mainly Savigny Lavières—where the fruit was picked extremely late (the end of October), crushed by foot, fermented and then fortified on skins (to 18.5%) using the Domaine’s own Fine de Bourgogne. The wine was then aged for five years in both topped and un-topped barrels before blending and bottling, with no SO2, in 2018. Pousse au Crime means to incite a crime, and this might certainly do that (by encouraging others to have a go at this wine style) as it’s absolutely delicious. The nose is packed with ripe plum, prune, coffee grinds and subtle, varnished oak leading to a silky, luscious, creamy, layered palate with similar notes—but mostly delicious characters of crushed raisins, milk chocolate and a long, warm and spicy close. Like a really, really fine Banyuls. Best served at cellar temperature with coffee and chocolate, but could also work with cheese and richer desserts (or, for the adventurous, a cleverly matched savoury course with the right sauce).

Chartreuse is an aromatic French liqueur flavoured with 130 herbs. Naturally green colour, it can be served cold or as a fragrant base to cocktails.

Limeburners Infinity Solera Single Malt Whisky

Matured in port puncheons, Limeburners Whisky is aged for up to 8 years. The resulting single malt is all spice and fruit with aromas of port and vanilla on the nose, barley, honey, raisins and caramel on the palate and finishes smooth.

Hobart Whisky Oatmeal Stout Single Malt Whisky (Batch 22-002)

Hobart Whisky is a family-owned distillery based in Hobart, Tasmania, established in 2014 their philosophy is entirely based around making whisky for them, that they love, and want to share. Despite being one of the first ten Tasmanian distilleries, they flew under the radar for quite a while, and in this time concentrated on making whisky. Not all expressions are the same and every bottle of every release is hand bottled and labelled in the distillery with each bottle having its own identifying bottle number. Hobart Whisky bears testimony to Tasmanian malted barley, fermented with style, gently distilled with grace, then sweetly rested in hand selected oak casks. Whiskies are matured predominantly in American oak ex-bourbon casks and each small batch holds its own distinctive characteristics and signature. This release is a barrel aged beer project from distiller and brewer, Ben and Trevor. Starting with an Oatmeal stout that was brewed onsite and barrel aged in ex-bourbon cask for 3 months. Carefully selected ex-bourbon mature single malt whisky was vatted before finishing in the freshly decanted stout cask. Initially planned for release in August, the stout was served at the 2022 Tasmanian Whisky Week boilermaker event at the Gold Bar. However the release was delayed with distiller Ben deciding to re-cask it into another fresh stout cask. The result is an undeniably stout cask influenced whisky that is rich and bold with notes of roasted hazelnuts, rich caramel, and subtle tobacco. Fruit and nut chocolate, banana bread, chocolate coated liquorice, a long finish with gentle ginger and rye spice sweetness lingering.

Great Southern Distillery Limeburners Port Cask Single Malt Australian Whisky is first matured in American oak ex-bourbon barrels and then in an Australia Port cask.
