Boutinot had been making wine from the Rhone Valley since the early 1980’s from across the region but really put some roots down when they were able to purchase some stunning vineyards some up to 50 years old in the AOP of Cairanne and establish a permanent winery on site. Planted at altitude on the cooler, abrupt hillside slopes of clay and limestone in the foothills of the Pyrenees, the Chenin Blanc from this region would often be destined for a Cremant de Limoux. However, for this wine, the grapes are left on the vine much longer and it is one of the latest varieties in the vineyard to be picked, achieving full ripeness yet retaining a refreshing crispness thanks to that cooler altitude. Gently citrussy and herbal aromas lead to a densely fruity, peachy palate with a silky texture and a clean, lifted finish. This wine pairs perfectly with warmly spiced dishes - Thai red curries and aromatic rice, spicy mango salads or even a fruity chicken tagine

Domaine de Chevalier uses traditional methods when making their flavoursome white blend of Sauvignon Blanc and Semillon. Fermentation occurs in oak casks and is then aged for 18th in oak, some of which is new. This practice was abandoned by many in Graves, only to be (rightfully) regenerated to allow wines of substance and character to be produced once again. Chevalier's Blanc is a wine that is taut and restrained that opens up over a six to eight year period to reveal a wine of supreme delicacy.
