Headlands Distilling Co. was founded in 2015 by four friends, with nothing more than a goal to produce unique, handcrafted spirits. Featuring two science PhD’s- Lachie and Thomas, an organic chemist/chemical engineer- Jared, and a business specialist, Dean, each member of the team brings an individual set of useful skills. Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before. Liqueur of the Illawarra Plum is rich, velvety & smooth. The consistency and taste is similar to that of a Port or Sherry; perfect for sipping neat after dinner with dark chocolate or enjoyed over a scoop of ice cream. The rare, native Illawarra Plum (Daalgaal) is hand foraged from along the coastline. Following in-house fermentation and distillation, the spirit is barrel aged on the plum skins, amplifying the flavour profile.

Made from a safely guarded recipe - two different types of lemons grown in Montacute Valley, Adelaide Hills (the original home of citrus growing in South Australia), a little mandarin peel and pure Adelaide Hills water! But why is this Limoncello so important? Well, some might call lemons "ugly" all due to their odd shape and different size, meaning not everyone wants them. After unsuccessful attempts to sell these lemons to supermarkets, the growers decided to remove the 150 year old trees. To help preserve this historic orchard, Applewood Distillery put up their hands and promised to buy all whole crop to make their delicious Limoncello. They hand peeled all those lemons to produce such a delicious drop.

The palate is oily but not dense, with warm spices and a balanced level of sweetness. Ginger, cinnamon and more sweet orange close it out, leaving a similar sense of satisfaction one gets from eating a piece of freshly baked cake. Marzipan characters of Goulburn Valley apricot kernels, held over from Marionette Apricot Brandy and Muscat from Australia's fortified-wine heartland Rutherglen rounds out this classic cocktail staple.
