The wines of Fraser Gallop Estate are intensely flavoured, textured and complex. Only the finest quality French oak barrels are used for all Fraser Gallop Estate wines, with very specific Bordelais coopers used for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian coopers for the Chardonnay. Representing the pinnacle of any given vintage, the Deep Woods Reserve Cabernet Sauvignon from the very low yielding original vines on the estate in the Yallingup region of Margaret River and a single growers vineyard in the Yallingup hills. The palate is layered with complex and generous varietal flavours, supported by interwoven French oak characters and a savoury complexity. This is an exceptional Cabernet that will age gracefully will careful cellaring.

Concentrated and complex with cocoa, currant, cassis, bay leaf and dusty gravel. There is an underlying violet perfume, which is all wrapped up in savoury-cedar oak. Medium bodied with a long and seamless palate. There are ample fine grain tannins, which gently coat the mouth and will help to age the wine gracefully. Again, the palate shows a good balance between fruit and complex characters, with cassis, mulberry and currants well integrated with bay leaf, cocoa and dusty gravel. The colour is medium density and purple edged, the aroma is of cedar and spicy cassis Cabernet and the earthy terroir character of the Whalebone Vineyard. The core of the wine is sweet but the finish is of gentle savoury tannin.The fruit flavours are sweet at the core but the wine retains the elegance, savory balance and refined but determined tannins, which are hallmarks of the Whalebone terroir.

Having worked closely with the growers over the years, they share Peter's belief in growing wine, not just grapes, and work with the winemaking team to keep yields low and produce a complex wine, with rich and firm dark fruit flavour.
