St Hugo Cabernet Shiraz displays a dark ruby red with purple hues. The bouquet of dark forest fruits such as plum, blueberry and cassis lead into a beautifully complex palate of blackcurrent, sweet plum and chalky tannins. There is a underlying savoury oak hint and a finish of lingering dark chocolate.

Devil's Lair is one of Margaret River's most respected wineries. This superbly structured Chardonnay displays lingering flavours influenced by top quality French oak; a beautiful textured mouth feel and tight acidity.

Margaret River is an under appreciated region for Australian Shiraz, and it's hard to see why with Cape Mentelle's Shiraz showing a vibrant core of blueberry, mulberry and hints of raspberry. It is well balanced with cocoa and savoury oak. The palate yet, is fine, elegant and focussed, finishing with chalky and structural tannins.

The citrus rind and grapefuit lead the palate to an overall fine yet textural journey. Cape Mentelle Chardonnay had this distinctive minerally line too, apparent with focussed refreshing acidity. Faint nuancesof soft nougat and cashews also add to what is a harmonious balance and an elegant and length finish.

For this wine, they blended Barossa Cabernet with Shiraz and a dash of Malbec to create a wine with layers of texture and flavour. By drawing fruit from a number of Barossa sub-regionseach with their own unique terroirthe Mentor captures the immense regional definition of a great Barossa red. Having worked closely with the growers over the years, they share Peter's belief in growing wine, not just grapes, and work with the winemaking team to keep yields low and produce a complex wine, with rich and firm dark fruit flavour.
