The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. Pair it with dishes like braised beef short ribs, garlic chicken wings, and zucchini gratin with tomato confit, to fully appreciate its satisfying flavours.

Almost blood red, this is a Cabernet Sauvignon & Shiraz in motion, changing and shifting from red scents of currants and cranberries to the black fruits of plum compote and black cherries, before a touch of cedar, leafy herbs and powdery black spices freshen the finish. The wine has a coolness that belies its power. The expression is as restrained as it is muscular. Richly layered, the fruit completes the structure. The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

The inaugural release of this wine from Juniper, it's a great example of Cabernet's ability to be powerful yet finely-structured and elegant at the same time. Superb.Deep ruby purple.
