The bouquet is an enticing mix of white field flowers, grapefruit, pear essence and brioche. Enriched with layers of nougat and nut-meal, the palate's fine, creamy texture is supported by toasted vanillin oak. A bright citrus and chalky lactic acidity adds restraint and length to finish the wine. Since the early 90's, Penfolds have been producing Chardonnay from the cool climate region of Tumbarumba. The Chardonnay is elegant with white florals, stone fruits and a great acidity structure. Maturation in French Oak gives the Bin 311 a subtle nutty savoury flavour through and through. A great all season wine for all sorts of occasions.

Ageing for a minimum of 24 months on lees adds complexity to the fresh citrus, red apple and spring blossom aromas. The palate is crisp with a lingering, mouth-watering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours. Winemaking: Different parcels of fruit are all hand-picked and whole bunch pressed separately into tank for settling. Fermentation of these small batches lasts around 12 days and in 2012 only some parcels of wine were putthrough malo-lactic ferment to soften the acidity and add complexity. Dog Point from Marlborough in New Zealand have quickly established themselves as quality Marlborough producers with their range of Chardonnay, Sauvignon Blanc and Pinot Noir. This Chardonnay has lovely texture due to lees stirring and balanced oak influence. Hints of citrus still remain to produce a Chardonnay of versatility.

Conceived as a white wine development program, the Bin 51 Riesling soon became one of Penfolds' star performers. Eden Valley is an obvious choice of region for Riesling due to the higher altitude and cool climate. The wine offers delicate aromas of fresh cut apples and pears with a twist of lemon and minerality towards the end. A great deal of fruits and acidity makes for an interesting white wine with propensity to age gracefully if carefully cellared.
