Cellaring has transformed the Eileen Hardy Shiraz into a beautifully polished and expressive wine, revealing the depth behind its vibrant core. Olivier Leflaive was co-manager of Domaine Leflaive until 1994 before withdrawing to concentrate on his own venture which he started in 1985. Today the domaine produces wine from some 65 appellations with 85% of the production being white wine. One of Burgundys most respected producers the estate produces a number of domaine wines from its own vineyards alongside its range of negocé bottlings. This Chardonnay is a wine with a fine aromatic intensity of almond, hazelnut, apple and a nice balance between smoothness and freshness on the palate.

Lively and full on the palate, underlined by balanced, measured oak aromas. A delicious, harmonious, well-balanced finish.

Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

Fermented, aged and released in the same magnum bottle, only fruit from 7 Grand Cru vineyards is used to craft a blend of equal parts Pinot Noir and Chardonnay, which spends over 4 years ageing on lees plus 6 months post disgorgement. Further gentle ageing takes place until deemed ready for release by the Cellar Master. It displays a multitude of citrus, white and red fruits, linked by a common thread of minerality producing a mature complexity, elegance and length.

The House of Bollinger has been producing fine wines of Champagne since 1829. In the last 180 or so years they have built a reputation of the highest standard. Rich and subtle with a pleasant nose and flavours that come back begging you for more, this is one of the finest non vintage Rosé Champagnes.

The blend is 100% Chardonnay from various years (20 to 25% of which are reserve wines from the 2 previous years). A large majority of Premiers Crus from the Côte des Blancs and Montagne de Reims vineyards for aromatic refinement, supplemented by Sézannais wines known to provide maturity. Finally, several wines from the north of the Vesle valley give a light, fresh touch.

Luscious meringue-like hints of sweetness highlighted by subtle floral notes with just the faintest whiff of spring – add a refined, red-fruit driven bouquet and you have all the hallmarks of a masterfully macerated rosé. On the palate the wine is wonderfully plush, with kirsch-like notes of raspberries intermixed with juicy citrus adding verve and layers of depth.
