Hickinbotham The Peake Cabernet Shiraz

A luxurious combination of soft ripe autumn berries with fresh cool country cherries, this wine exemplifies the harmony that can be achieved by blending these two noble grapes together. The wine has an unctuous elegance that caresses the palate with a structure that is exceeded only in its width by its length. Still a youthful creature, this wine will age gracefully for decades to come. A blend of Cabernet Sauvignon (57%) and Shiraz (43%). Sourced from 1971 (100%) planted on the Estate. All batches were fermented separately and blended prior to bottling. These batches of Cabernet and Shiraz represent the pinnacle wines from the Estate, our vision is to produce a seamless integration of the best of both varieties, with great aging potential. The winemaking follow suit from the previous wines, this wine is about the best blocks of the vintage and best barrels being carefully blended. Rack and returned three times during the maturation of 15 months 100% new oak, Shiraz Burgundy coopered French oak, Cabernet Bordeaux coopered French oak Alan Hickinbotham established the vineyard bearing his name in 1971 when he planted dry- grown cabernet sauvignon and shiraz in contoured rows on the sloping site. He was a very successful builder, this his first venture into wine, but his father, Alan Robb Hickinbotham, had a long and distinguished career, co-founding the oenology diploma at Roseworthy in 36. In 2012 Clarendon, and the stately sandstone house on the property, was purchased by Jackson Family Wines; it is run as a separate business from Yangarra Estate Vineyard, with different winemaking teams and wines. The Hickinbotham Clarendon Vineyard covers a steep cut of country from the ridgetops above the village of Clarendon to the Onkaparinga River in the gorge below. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.

Izway Don Shiraz

The 2021 Don Shiraz benefited from the 2020/2021 growing season's respite from previous hot and dry conditions, with abundant winter rain leading to healthy vineyards and slightly above-average crop sets. Despite a dry summer, early canopy growth sustained the fruit, which developed flavor and ripeness early, allowing for harvest with lower sugar and higher natural acidity. The fruit arrived in perfect condition, and the resulting wines from this vintage are noted for their freshness, depth, and personality, marking 2021 as a standout year. Vinification included a natural soak followed by a week of natural fermentation, with careful extraction methods employed throughout. Post-fermentation, the wine was basket-pressed and underwent malolactic fermentation in oak. The 2021 Don Shiraz opens with a quiet assertiveness, revealing earthy and spicy notes indicative of a cooler harvest. As it unwinds, powerful aromas of red berries, leather, and dark chocolate emerge. The palate is refined and balanced, with assertive tannins, crisp acidity, and restrained opulence. The true depth and complexity of this vintage will unfold over time, promising a remarkable wine experience. Alc. 14.8%

Clos Otto is the bold rich flagship Shiraz from Hentley Farm. Sourced off a dry-farmed, 3.3-hectare east-facing single vineyard in the Barossa Valley, the fruit is vinified and then typically pressed to predominantly new French oak for 22 months.

Deep ruby, purple in colour showing intense and creamy aromas of dark compote berry fruit with hints of blackberry, plums and mulberries peeking through. Grant Burge Meshach Barossa Shiraz

Mount Stapylton Don Shiraz

The 2018 Don Shiraz was our first release as new owners of the vineyard.Fruit was handpicked to enhance best quality and this particular season was outstanding.After natural fermentation of 2 weeks the wine was pressed off skins and then rack to (25% new) French and American barriques for the next 15 months.The wine displays a lovely deep purple crimson colour, ripe blueberries and spices, a touch of black pepper and is rounded out by generous palate flavours.Cellaring and decanting will further enhance this wine.A special wine that is drinking superbly now or save for that special occasion.
