The Torbreck Les Amis Grenache is aged for 18 months in new oak and is a remarkably fragrant wine that shows abundant aromas of spice, cherry and wild raspberry. Textured and plush on the palate, it evolves into layers of blackberry and red currants with firm, ripe tannins. Considered by Jim Murray to be the 3rd best whisky in the world as part of his 2010 Whisky Bible, the Fusion is a phenomenal amalgam of flavours, aromas and texture the envy of most, even in Scotland. On the nose this spectacular whisky offers up notes of heavy oak, barley sugar and some subtle smoke characters that play ever so well with amazingly complex flavours like custard cream, toffee and dried fruits. While the whisky threatens to be completely overpowering, the balance on the finish is nothing short of ground breaking. The Kevin John Chardonnay is Cullens flagship white from their biodynamic vineyards. A refined and elegant style brimming with white peach and citrus, showing bakery nutty complexity and deft oak integration. The wine is named in honour of Vanya Cullens father, the late Kevin John Cullen. Grapes are harvested on a flower or fruit day and whole-bunch pressed to obtain the highest quality juice. It is then barrel fermented with native yeasts in French oak barriques and matured for approximately 7 months in one- third new and two-thirds seasoned oak barrels.

Small parcels of fruit from old dry grown vines are selected for their intensity of flavour and individual qualities. Complex and concentrated this classic Barossan will continue to develop for a decade at least.

Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

This new vintage is fresh and crisp, taut and racy. A fine youthful wine that promises to age gracefully for five to six years. 70% Pinot noir - 30% Chardonnay. One third of the wine is matured in oak casks prior to bottling, after four years on lees, it is disgorged, it sees dosage of 8-10 g/l before another 6 months in bottle prior to release.

With plenty of blackberry, plum, mulberry and menthol-like fruit and fine, rusty, almost unyielding tannins, this is a strong, firm wine by Wendouree with plenty of lasting power. The Shiraz component derives from vineyard plots that include bush vine material. Parcels of very old vine Malbec bring further distinctiveness. The wine is vinified in open fermenters and matured for 12 months in new and used French oak.

Chamapagne Rosé is a true delight to the senses and Billecart-Salmon rightly takes its place in the top echelon. A vibrant Salmon pink colour greets the glass, with a long, smooth, delicate, elegant and refined palate to follow. Without the price tag that others of this quality demand, this is a Champagne that all must enjoy at least once.
