Australia's premier sparkling winemaker, Ed Carr, produces elite sparkling wines that border on the perfection. The equal to any prestigious Champagne, House of Arras have a track record of releasing Australia's finest examples. Here the new Arras Blanc de Blancs is the latest to join the range and is a sparkling wine that truly expresses the attributes of prestige Tasmanian Chardonnay, meticulous winemaking and extensive age on yeast lees. Hands on techniques including gentle whole bunch pressing, fermentation on light lees which went through 100% malolactic and almost 10 years in tirage were employed. The wine itself is a masterpiece that possesses a brilliant clarity and ultra-fine persistent bead. Lifted citrus of grapefruit and lemon zest are complimented with buttered toast.

Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.

His determination to create wines of intensity, elegance and regional character have inspired a generation of Australian winemakers to achieve great things. Simply one of this country's greatest Cabernets, this wine is not just single vineyard fruit, the selection process is so rigorous that often it is just a few rows from the Justin Vineyard. Certified biodynamic and organic. Magnificent pitch black colour with a very deep bright dark red black hue. On the nose a lovely mix of red to black currant and mulberry scents morph into violet, vanillin cedar, dried herb, tobacco, black olive and spicy bay leaf notes. Medium bodied, elegant and superbly structured, the palate features a tightly knit matrix of red to black currant, mulberry and black olive flavours. Bright youthful acidity and an assertive grainy tannin structure provide an iron girder like core. Notions of tobacco, dried herbs, vanillin cedar and spicy bay leaf infusions also chime in. Restrained and understated in its power at present it concludes long and rich yet compact. Cellar 10-20 years. Alc. 13%

Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

Felton Road Block 2 Chardonnay comes from a special parcel in the Elms vineyard on a gentle east facing slope, schist gravel soils and Felton Road's oldest Chardonnay vines. With natural hands on winemaking, results in a wine that expresses a true sense of place.

The Kevin John Chardonnay is Cullens flagship white from their biodynamic vineyards. A refined and elegant style brimming with white peach and citrus, showing bakery nutty complexity and deft oak integration. The wine is named in honour of Vanya Cullens father, the late Kevin John Cullen. Grapes are harvested on a flower or fruit day and whole-bunch pressed to obtain the highest quality juice. It is then barrel fermented with native yeasts in French oak barriques and matured for approximately 7 months in one- third new and two-thirds seasoned oak barrels.

One of the finest of all French Champagne houses and in top form in recent years with their vintage releases. Vintage Pol combines elegance and finesse with depth and complexity of flavour.

The Bin 389 style evolved as a result of experiments, by Max Schubert, in the 1950s to develop a highly individual wine using a blend of Cabernet Sauvignon and Shiraz with compatible oak treatment. Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - balance between fruit and oak, giving the wine character and longevity.
