Moss Wood Moss Wood Vineyard Cabernet Sauvignon, Margaret River Moss Wood is one of the Margaret River originals (planted 1969; first vintage 1973) and this iconic flagship wine Langtons Classified since 1990 has long been Western Australias leading Cabernet Sauvignon. Figures from the cellarage company Wine Ark show that it consistently rates as Australias Most Collected Cabernet. Moss Wood Cabernet Sauvignon is intensely perfumed and finely structured with cassis-blackcurrant aromas, hints of cedar and touches of violet. The oak and fruit are neatly balanced. With proven ageing potential the wine develops subtle earth/demi-glace briar characters on the bouquet, and complexity and suppleness on the palate. The unirrigated and widely spaced vineyard (now 14.86-hectares) is planted on gentle north-east facing slopes with sandy loams to a gravelly red/brown loams over clay. Typically the fruit is hand-picked, de-stemmed into open tanks and hand-plunged four times a day until completion of fermentation. At the end of vinification, the wine is allowed to macerate for around 10 to 14 days prior to pressing off into barrel. The wine is matured in 30% new and seasoned French oak barriques for 24 months.

Intense black inky core and narrow purple rim. The nose opens onto a dense brooding mass of dark blackberry and blackcurrant fruit. Compact and concentrated, it also displays exceptional purity - one of the hallmarks of the 2011 vintage. The nose gradually opens to reveal an array of heady herbal scents, discreet notes of exotic wood, marzipan and plum as well as an attractive graphite minerality. Solid well integrated tannins give both volume and firmness to the palate with its reserves of dense black fruit infused with dark chocolate and liquorice. Ilegal mezcal is a beautifully balanced vintage mezcal from Tlacolula, Oaxaca Mexico. It is made by a fourth generation Mescalero and his family using 500 year old methods. Aged for four months in new American oak. Caramelised pear on the nose, agave, butterscotch and vanilla on the palate. A light fruit finish. Velvety smokiness throughout.

The Bin 389 style evolved as a result of experiments, by Max Schubert, in the 1950s to develop a highly individual wine using a blend of Cabernet Sauvignon and Shiraz with compatible oak treatment. Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - balance between fruit and oak, giving the wine character and longevity.

With a name that directly translates from French as 'The Soil', the Le Sol Syrah (Shiraz) pays homage to the terroir that creates this rich and evocative wine. With the trademark Gimblett Gravels stony soil, with exhibits amazing refinement and breeding while not relinquishing body and complexity.

Picardy is one of Australia's leading premium boutique wine producers, established in 1993 in the Pemberton region of Western Australia. Picardy is owned and operated by Bill, Sandra, and Dan Pannell. Tete De Cuvee means the best wine of the vintage. This wine was born through Bill and Dan's love of the great Premier Cru and Grand Cru red wines and their desire to make the best Pinot Noir of which Picardy is capable.

The Bullnose Syrah from Te Mata is one of New Zealand's original Syrah wines, having been made since 1992. Vineyard partners, Michael Morris and Peter Cowley - both car enthusiasts - named the wine after the pre-1928 Morris Cowley car, nicknamed Bullnose due to its distinctive radiator. The Bullnose is a single vineyard wine from Hawke's Bay that shows characters that are aromatic, savoury, and elegant. It's an expression of syrah which, when well stored, develops and intensifies in bottle with medium term cellaring.

Château Latour à is an unclassified producer yet amongst the great crus of the Pomerol appellation. The excellent 1982 vintage has produced a Latour à for the ages. Still retaining structure in its maturity, the nose exerts dark fruits, herbs and subtle spice leading to the elegantly balanced palate.
