Welcome to ED.02 of our Methode Eucalypt. After 2020s raging success, we are so excited to release the next vintage. This trial tests the hypothesis that vineyards amongst gum trees take on some aroma and flavour of Eucalyptus. Grapes were mechanically harvested in close proximity to Red Gums into 1T bins. The resultant wine showed significantly increased Eucalyptus aroma and flavour. This matured into a distinctly Australian Cabernet Sauvignon that expresses the environment and place in which it was grown. Balanced minty Or Eucalyptus aromas and flavours add to the Cabernet Sauvignon’s complexity, creating a uniquely Australian wine. It is a wine that expresses terroir in the true sense of the word.

The Cigar 2018 is a lovely bright, fresh Coonawarra Cabernet. Vibrant, deep magenta in colour. The aromatics are rich with blue and black fruits, notes of spice and warm, comforting aromas of cedar, strawberry compote and sandalwood. The palate is expressive with blackcurrant, plum and clove spice, melding with dark chocolate and ripe fruits. The wine has a beautiful structure with fine tannins and balanced acidity ensuring longevity.

The Rymill Coonawarra Classic Shiraz 2021 is a bold, full-bodied red wine from South Australia, crafted from 100% estate-grown, sustainably farmed Shiraz. Brimming with dark fruit, pepper, and spice, it delivers a rich palate of blackberries, chocolate, and earthy undertones wrapped in velvety tannins. Perfect with lamb, beef, or roasted vegetables, this refined Shiraz showcases the depth and character of Coonawarra’s renowned terroir.

Aromas of casis, raspberries and savoury undertones. Tannins are slightly firm, with a lovely tempo all the way to the finish. The merlot provides a soft, mid palate which is supported by black currant and toasted, savoury spice. The acid is still lovely and bright making this a joy to drink.
