Cold maceration depending on the quality of the grapes. Slow start of alcoholic fermentation with 2 to 3 times a day and then shedding. 3-week soft maceration at 22°C. Maturing in cement tank.

Founded in 1815, Dolin is among the few remaining independent producers of Vermouth in the world and the last producing Vermouth de Chambery, still made according to the principles which earned Chambery, France's only A.O. The dry vermouth is light, fresh and clean made from a delicate wine base and more than thirty Alpine herbs. From its start in 1821, it has long been the benchmark for fine French Vermouth.

Howard Park Sauvignon Blanc contains a fragrant nose of snow peas and guava with a little passionfruit which is a precursor to a palate that's juicy and tight with citrus acidity. A barrel fermented component ensures that there is a level of complexity that separates it from its contemporaries.
