Giovanni Rosso is a family-owned estate who have been growing grapes in the Comune of Serralunga d'Alba since the 1890's, including the Crus of Cerretta and Serra. During the 1980's, Giovanni Rosso restructured the vineyards with the aim of producing the best possible wines, and in 2001, Giovanni's son Davide took charge of winemaking, following his own mantra "wine should be a perfect copy of its terroir". The fermentation lasts some 25 days according to the vintage with daily pumping over of the wine mass with délestages at half of the period (fermentation in concrete tanks). The aging is conducted in 50hl large barrels of Fontainebleau Forest oak from 18 to 36 months according to the vintage and the vineyard of provenience.

Ca' Rome' Romano Marengo Rapet Barolo The Rapet Barolo presents as an intense garnet red in the glass with ruby hues. The nose is full of fruity aromas with floral and spicy notes. On the palate, the flavour is intense buttressed by opulent and enveloping tannins and a long finish. The Rapet fruit is sourced from a southwestern vineyard located in Serralunga dAlba. The soils go back to the Helvetian period and comprises compact calcareous clay that alternates with sandy layers at 350-371 metres above sea level. Maceration lasts 20 days using a traditional method of maceration called steccatura at a temperature that never exceeds 30°C. This method involves wedging stocks into the vat to hold the cap (grape skins and pulp) down below the surface of the juice. This slow, gentle extractraction coaxes the signature tannins from the Nebbiolo grape skins. Aged for 24 months in 25 hectolitre Slavonian oak barrels with a portion of it part aged in barrique. The wine is further aged in-bottle for at least 12 months.

CA DEL BAIO Barbaresco Cru Vallegrande For four generations, the Grasso family has quietly made a name for themselves in the Barbaresco region, stretching back to the late 1800s when Giuseppe Grasso moved from Calosso in the Asti region to Treiso. The Barbaresco from Ca del Baio is garnet red with intense aromas of red fruits and flowers on the nose. The wine is dry, smooth and well-rounded on the palate with nicely balanced tannins and a long finish. Perfect with a fine pasta.

In 1904 a co-operative winery called Ai Vino Delle Langhe was founded and a young man who worked there was Alfred Prunotto. Prunotto took over the estate in 1922, giving it his own name and today it is run under the umbrella of the famous Marchesi Antinori family. Located in Alba the estate tends around 50 hectares of vineyards throughout the Langhe and Monferrato. This Nebbiolo is garnet red in colour with ample and complex aromas of violets and berry fruit, full and velvety in flavour and very balanced. Its structure and body make it an ideal match for meat and game dishes and for cheese.

The EJ Shiraz is the jewel in Paxton's organic and biodynamic crown. Awarded 95 points in the Halliday Wine Companion 2017, this wine is the result of low yielding vines that are more than a century old. The flavour is elegant and round and the nose offers vanilla, black current and oak.
