The wine is made in as natural a way as possible, harking back to ancient winemaking techniques. Hand picked, some carbonic fermentation, minimal plunging, racked from barrel and bottled without fining or filtration. No added sulphites. Deep red like your mum's lipstick. Bright and crunchy, yet dark and dense just like a bar of black forest chocolate. Red fruits mingle with dried herbs and tobacco. A raw expression of Pinot Noir.

“Big Barrel’ refers to Steve’s unique roll fermentation method in big, 1000 litre French oak fudres. This results in agentle extraction of colour and tannins from the grapes and gives the wine’s magnificent texture. The picturesque hillside site in Marlborough’s Southern Whither Hill where the grapes for this wine are grown is a true hidden gem; a tiny block that's just right for a family operation like Steve Bird Wines. Here, it has produced a genuinely impressive Pinot Noir with earthy, spicy notes in support of the rich, dark-fruit aromas. Anna and Jason Flowerday run the Te Whare Ra vineyard in Marlborough according to organic and bio-dynamic practices. The fruit is picked and sorted by hand, then processed in a winery especially designed for small-batch wine-making. This dry Pinot Gris is finely structured with great purity and length of flavour. Lifted aromas of nashi pear, raspberry, red apple and white florals follow on to the palate, where they're balanced by a fine, supple texture and lingering minerality.

The Wither Hills Pinot Gris has lovely fruit and aromas of ripe white peach, citrus and quince. It is off-dry on the palate with some refreshing acidity and beautiful succulent mouth feel. Perfect with a range of different dishes from salty cheeses to stronger flavour dishes such as wood smoked salmon or roast pork.
