Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Forty Spotted Rare Tasmanian Gin is hand distilled in small copper pot stills using the steeping method of Gin production and use of traditional botanicals of juniper berry, coriander and lemon peel creating a traditional London Dry style, but incorporating something a little bit special to give this Gin a unique finish.

What’s your whim? Say it with Gin. Our Violet Gin is the mood ring of beverages. Transform the broody blues of Butterfly Pea flower to ultraviolet with tonic. A bouquet of heady Australian native botanicals including lemon myrtle, finger lime and pepper berry abounds. On the palate, layers of intriguing flavour unfold, from familiar juniper to juicy finger lime, mellow wattle seed and lingering zest and peppery spice.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon.
