Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Esters striking Dry Gin is crafted using a traditional all-in method of distillation. Sitting at a proper and well-integrated 43% abv, the recipe takes the clean, juniper-forward profile inspired by a classic London Dry style before layers of Esters own unique twistwith a punch of savoury citrus flavour and the judicious accent of locally grown botanicals.

A premium seasonal gin made in the style of English sloe gin, supplanting handpicked local Mulberries in the place of the traditional sloes. Local mulberries are steeped in the gin, then pressed by hand; final steps include light filtering before bottling. Naturally sweet, rich and smooth mulberry flavours distinguish this elegant gin. Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).

Four Pillars Spiced Negroni Gin is an aromatic, rich and spicy gin with great power and intensity. First, they take the base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then the addition of an exotic West African spice called Grains of Paradise. Although powerful, the spice tends to glow rather than become hot. Beautiful organic blood oranges are one of the last additions to the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level.

Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
