Released with bottle age this is a wine which will still continue to evolve over many years the toasty lemony flavours becoming richer and more intense. A classic benchmark Hunter Semillon, it has earned its place in the Langtons Classification of Australian Wine.

A perfect marriage of Shiraz and Cabernet Sauvignon fruits, this is a modern Australian style of red wine. The Cabernet gives the wine structure and length, while the Shiraz imparts it deep plum fruit sweetness, along with dark berry and chocolate flavours. This is a nice and well rounded drink.

The Triolet blend, first produced at this vineyard in 1987, was inspired by the white wines of Graves, Bordeaux. Each variety is picked at optimum ripeness, and is usually fermented separately. The characteristics of optimum ripeness are different for each variety. We pick the Sauvignon blanc after the strong herbaceous flavours have disappeared, the Semillon when the acid is not too harsh, and the Muscadelle when the flavour intensity peaks.

The fruit for the 2016 Vat 9 Shiraz was sourced from Tyrrells super premium vineyards on the Ashmans property with an average vine age of 50 years. Predominately from the Weinkeller and Short Flat vineyards. Winemaking The blocks were all hand picked and sorted in the vineyard before arriving at the winery. All the fruit was then destemmed but not crushed, followed by fermentation in traditional open top concrete vats. After fermentation the wiens were matured in newer 2700L French oak casks for ten months.

Its got a very beautiful expression of wet stones and textures, its layered, with a bit of spice as well.

The Auslese examples typically show grapefruit citrus and green apple aromas, with honeyed overtones, wonderful density and pronounced minerality carried along by signature Mosel racy acidity.
