The roots of Sevenhill Cellars go all the way back to the 16th century when a young Spanish courtier called Inigo swapped a life of violence for one dedicated to helping others and co-founded the religious order we know today as the Jesuits. He mistakenly thought the Latin translation of his name was Ignatius and hundreds of years later, the more well-known St Ignatius has stuck fast. Fast forward to Adelaide in 1848, where Jesuit priests struck out North with a group of over 100 German and Silesian migrants. Amid the beautiful rolling hills of the Clare Valley is where they decided to settle and, after purchasing 100 acres of land in 1849, the young priest named the property Sevenhill in honour of the seven hills of Rome. This Riesling enjoys a bright aroma of lime, citrus, mineral and orange blossom. The palate is finely structured with gentle citrus and nectarine fruit flavours, crisp acidity and a clean balanced finish.

For John Hughes, the attraction to Riesling is all encompassing. Growing up on a small vineyard in the Clare Valley, and going on to work with some of the brightest Riesling makers in the country before launching his own venture, John is never far away from his beloved grape. John makes classic Australian styles from carefully selected vineyards with an emphasis on purity and site reflection, as well as German-inspired expressions that balance acidity and sugar with singular precision.

Brilliant very pale straw colour with greenish tinged edges and a watery hue. Elevated pear and red apple aromas intermix with hints of honeysuckle and lime. Delicious juicy pear and red apple fruits drive the mouth watering palate with some delicate infusions of fresh herbs lying underneath. This wine from Vickery displays hallmark Watervale aromas showing pure Riesling characteristics of fresh lemon-lime citrus, floral honeysuckle and a creamy richness. The flavours are fresh lemon citrus, with soft mineral acidity supported by the persistent and mouth-watering finish. An absolute delight to drink in its first flush of youth, but will intrigue and reward with additional complexity upon cellaring for 5-20 years.

Fresh, crisp and dry as it always is upon release. Finishes clean and dry with just a hint of textural grip.
